Omg, I made this soup today, and let me tell you...it came out fabulous! My husband and I couldn't get enough of it, we can't wait to eat it for leftovers tomorrow.
Your recipes are some of the best. I think the fresh taste of lemon zest is probably something similar to putting tomatoes sauteed in butter in chicken soup. It's a competing flavor with the chicken broth but I have come to like it. However, I think I will reduce the lemon zest by 2/3 for my first try. I might also slightly brown the chicken meatballs before sweating the veggies and add them back a little later between the pasta and the spinach. Hopefully, they don't fall apart.
I wouldn't exactly say 45 minutes for a small batch of soup is quick. Italian Wedding is one of my favourite soups to make, but the meatballs always tack on a huge amount of prep time.
Just made this because I was sick 😷 OMG So glad I made a huge batch. Delicious! (Worked fine with frozen spinach & jarred/grated Parmesan if that’s all you have on hand). Don’t skip the lemon! 🍋
Hi Laura. I have made this type of soup all my life but never tried it with the lemon rind. It's an absolutely amazing touch. You don't recognize the flavour as being lemon rind but it really brings it to another level. Thanks
Thank you Laura, I am getting married this summer and will be making this soup for my guest. It is a down home wedding, and I am making most of the dishes. This soup is going to be my gem in the middle of the menu. Love your recipes/
I love this recipe. I use ground turkey for the meatballs but use her guidelines and recipe. The meatballs that cook in the broth are unbelievably tender
Made this tonight and it was just perfect. The most time consuming part of this recipe is forming the meatballs and that didn't take much time at all. Thanks for sharing Laura!

I use a whole chicken & start like a reg chicken soup, use gr.chuck,veal & pork for meatballs & always use chickory or escarole. At the end I beat several eggs with Parm cheese and add to soup and stir for a few mins til done. Serve with Italian bread. Yummy have this at least once a month.

I made this soup after your recipe. It was very good, but I wouldn't put lemon rind in the little meatballs. I don't think it gives it a good flavor. That's one thing I'd leave out.
@hugedownlow not italian but i am married to one i know this soup is not even close!! to the real thing lol above all it looks good and it's easy simple but it suits for the people who are on the go or dont have the ingredients for the soup cause some markets may or may carry the ingredients needed for the actual soup recipe cause some locations may vary i luckily don't have the problem but some do
For the meatballs she uses Parmigianino reggiano cheese. She explains that the soup traditionally calls for pecorino cheese but she doesn't like it, so she uses parm!
Laura when ever you say your name I hear "Laura of Italy" coz you say it so fast with a little italian accent... its cool tho coz you're italian so I think your name suits you the way I hear it! :p
Nice soup! I'll try it myself. I'm thinking of searing the chicken balls first to try and get more flavor out of them and maybe throw in a piece of flank steak and a little tomato paste as well... Check out my videos as well. "Josh's cooking corner". i only made three . Thanks for the nice video :)

Well done. I'm gonna give this a go this week ! I use local farm eggs, so yes... they get cracked onto a saucer, rather than a bowl. Easier to slide into the recipe, and easier to clean a saucer at the end. Just in case the egg is 'off', for whatever reason Even store-bought eggs sometimes miss quality control.
