ありがとうございます男の人。I mean it seriously thank you so much for putting tutorials on how to make certain Japanese dishes. When I came across your channel I barely knew what rice to use, but now following your directions, I can now make お握り. Again thank you so much!

For not being Japanese, I'm quite proud of my onigiri craftsmanship from learning through RU-vid. They are such a great snack and I hope they get more popular here. At least they aren't referred to by "jelly donuts" any longer. As soon as I saw that finger trick, I knew you were referring to Uncle Roger and I find it entertaining you brought it up. Keep up the good videos!

Man looks so good! Sometimes there is nothing beats some good old simple rice recipe. My fav is basmati (or any long grain rice) with brown melted butter 😋
@NoRecipes

Thanks Zack, one of my favorite onigiri is just plain white rice with lots of sea salt on the outside wrapped in seasoned nori. Basmati with browned butter sounds like a great combo!

Great video. These onigiri look amazing! So is tuna mayo safe for a few hours without refrigeration? It's my favorite flavor, but I always worry about putting it in a lunchbox.
@NoRecipes
@NoRecipes 9 месяцев назад
Thank you! When it comes to food safety stuff it depends on so many things (like the ambient humidity and temperature, whether you handled everything with gloves and clean utensils or not, etc.) so it's hard to give you a yes or no answer, however it's pretty common to pack onigiri for lunch here in Japan.

I have tried to make Onigiri with 3 ingredients that I like: Cooked Rice Cooked Salmon - shredded and mixed Shiso I mix everything and make it into the triangle shapes, but after a while, they just start falling apart, so I just make balls out of it; will the Nori help keep it together? or does it have to do with the consistency of the rice?

Hi Eduardo, that combo sounds delicious! What kind of rice are. you using?

@@NoRecipes Long Grain Jasmine Rice, haven't had much luck for it to clump together. my next move was to use sushi rice.
@NoRecipes
@NoRecipes 4 года назад
@@arkprice That's definitely the problem. You can go read my explanation for choosing rice for Onigiri here: norecipes.com/onigiri-japanese-rice-balls/ You'll want to check the label when buying "sushi rice" as sometimes they sell medium grain rice as sushi rice.

Great instructional video - thank you. Would it be ok to make these onigiri the night before a picnic lunch?
@NoRecipes
@NoRecipes 3 года назад
Hi Rhea, you'll need to refrigerate them if you're making them the night before, but refrigerated rice will retrograde (the starches recrystallize), which makes it hard. You'd probably be better off making any side dishes the night before, and then making the onigiri the day of.
@ChicagoGriller
@ChicagoGriller 4 года назад
Great tips! I really like making my own onigiri, but the the stickiness of the rice is a real pain in the arse! Your hand-formed onigiri skills are IMPRESSIVE! I cheat and just use a press I got at a hyaku yen store (or for those not in Japan there's always Amazon). Great video again!
@NoRecipes
@NoRecipes 4 года назад
Thank you! To be honest, I used to use a mold, but the texture of a hand shaped onigiri is better (molds make them too compact). As long as your hands are wet and the rice is hot, it shouldn't stick too much. Another way you can get around rice sticking to your hands is to use plastic wrap, but it's not very eco-friendly which is why I didn't show it.
@ChicagoGriller
@ChicagoGriller 4 года назад
@@NoRecipes Yeah, the mold I have does make them quite small. I guess I will just practice some more!

My trick if japanese rice is hard to find in area, is sticky rice (glutinous rice) 3 part usual rice to 1 part glutinous rice. Also soak the rice for 30 minutes before you cook it. My favorite onigiri filling spicy tuna mayo, yolk soaked in soy sauce, okaka & spicy chicken floss. Edit: if you're Indonesian, menthik susu rice is probably the most similar to japanese rice, just a bit more fragrant.

Thanks for sharing! Love the idea of using a soy sauce cured yolk as a filling for onigiri!

Hi Tshandamay, Japanese short-grain rice is not the same thing as sticky rice. Sticky rice is much more sticky and is usually used to for making desserts like mochi.
