How To Make Kachchi Biriyani At Home

Ingredients:
1 ½ kg mutton
1 ½ tbsp salt
2 tbsp vinegar
2 mace blades
¾ nutmeg
3 small cinnamon sticks
2 black cardamom
6 cardamom
1 ¼ tsp white pepper
1 cup plain yogurt
1 ½ tbsp garlic paste
2 tbsp ginger paste
1 ½ tsp red chili powder
¼ cup ketchup
¾ cup fried onions
3 tbsp powdered milk
1 ghee tbsp
1 tbsp kewra water
½ tsp salt
1 tsp sugar
4 medium potatoes
¼ tsp food colour
3 bay leaves
2 small cinnamon sticks
5 cardamom
7 cloves
1 tsp caraway seeds
1 ½ tbsp salt
4 cups basmati rice
½ cup fried onions
8-10 green chilies
6 prunes
4 tbsp mawa
1 ½ tbsp kewra water
1 tsp rose water
1 cup milk
3-4 tbsp ghee
Instructions:
1. Soak mutton in water with salt and vinegar
2. In a pan, dry roast mace, nutmeg, cinnamon sticks, cardamoms, and white peppercorn
3. Blend the roasted spices and pour it into a bowl
4. Add yogurt, garlic paste, ginger paste, red chili powder, ketchup, and fried onions
5. Mix in the mutton and add powdered milk, ghee, and kewra water
6. Marinate for 1 hour
7. In a pan, drizzle cooking oil, add salt, sugar, and potatoes coated in food colour
8. Pan fry the potatoes until lightly brown then remove from heat
9. In a large pot with water, add bay leaves, cinnamon sticks, cardamom, cloves, caraway seeds, and salt to taste
10. Bring water to boil and add soaked basmati rice
11. Cover with lid and cook for 4 ½ minutes
12. Place the marinated mutton in a large pot, layer it with potatoes, fried onions, green chilies, prunes, mawa, basmati rice, kewra water, rose water, milk, ghee, and food colouring
13. Seal the pot with atta
14. Cook for 10 minutes on high heat then cook for 1 more hour on low heat
15. Mix well before serving
16. Ready to enjoy!

if you switch out the basmati rice for kali jeera rice, it may come out a lot more fragrant. Traditional Kacchi isn't cooked with basmati like a lot of Biryanis. Its cooked with Chinigura rice. I don't know how available it is in the West though. source : I grew up in Old Dhaka.

@@tabassumislam5436 the person may be Bangladeshi but she indeed is not making Kacchi here, or at least the authentic one. Cause kacchi and any other authentic Bangladeshi biriyani is made with either chinigura or kalijeera rice, which are the superior and aromatic rice variants than basmati. Even basmati is not our rice variant. While the long grains look good, it does not taste or smell anywhere near how kalijeera or chinigura tastes and smells.

Omg it was amazing. I was apprehensive about it being watery. But not all, it was perfect. I made a few adjustments though while cooking- I skipped the tomato ketchup while marinating. Marinated overnight. Used 3 cups of rice and 1 kg lamb mutton. Dum was for 1.5 hrs and I opened right after ( I had planned to keep dum for another 15 mins without gas but was too impatient to wait. ) It was succulent, the taste was subtle and overall beautiful! Plus so much less effort to make this version of biryani than the one I made. Thank you for the wonderful recipe recommend Banglar Rannaghor.

People who are complaining about milk powder and ketchup. Please don’t be so ignorant before even trying it. Let me remind you biriyani can be made in many different ways. It varies from region. Your way of making biriyani is not necessarily the only way. And about ketchup and milk powder. Well Ketchup is added for it’s sweetness and tangyness and milk powder is added for the texture of the rice and it's taste. They really bring up the A game in a kacchi biriyani. So please don’t be so ignorant before even trying it.

You missed two vital ingredients. 1. Instead of Orange food color, use Saffron in Hot milk and in that hot milk pour little ghee. After that you can add the fried golden onion to the milk and blend it. Put that mixture in your marination and wala you will be licking your fingers. 2. During Marination you did not put burning coal and seal it. The coal is the essential part for the smoky taste. Overall the video is Top-Notch. Keep up the good work,

@@deepchatterjee5123 You are correct that Jafran is expensive and food coloring is the cheapest alternative to give you the same texture, I just pointed what else needs to be added. This channel's video content is top-notch and no complaints about that. Kacchi biryani is one of those delicacy dishes in Bangladesh brought by the Mughals - similar to Hydrabadi biryani in India. The authentic Kacchi's can be found in Restaurants and Shadis. The best Kacchi is that - while you eat the Chipak(due to Yakhni) in your hands needs to be there but the rice won't stick. Even after you wash your hands, you can still smell the amazing flavors from your fingers - all these now making me hungry. But @Deepak if you ever come and visit Bangladesh Dhaka, then do go to Sultan's Dine or Nawabs or if you are lucky even attend a Shadi - You will be mesmerized with the taste. However, I give a round-off applaud to Banglar Rannaghor for their hard work.

Surprisingly blended black cardamon added the smoky taste without having to go through the hassle of putting burning coal on the meat! I have tried atleast 20 recipes of Kachhi but this recipe by faar is the best recipe I have come across. I have used this recipe 5 times so far and believe me when I tell you that IT IS THE EASIEST RECIPE and yields the best result! 🤤

I have tried this recipe a few times now,I love the flavours,it is a very doable at home biryani recipe. Might not be authentic with the ketchup,milk powder etc But tastes delicious and can be made at home easily. Thanks for sharing this with us!

milk powder is definitely used in authentic Kacchi lol. it may look like it doesn't belong there, but it def does. as does Milk Curd . Same with Morog Polau . Milk Curd + Powdered milk .

Can you please do this recipe with deshi “chinigura” or “kataribhog” rice as we mostly use those while cooking Biriyani or Polau.The cooking time and soaking time with those rice might be different.

I tried with chinigura rice, it dis not not work. The meat needs to cook way longer than the rice (my conclusion from the experiences). Rice becomes mushy every time. Basmati works just perfectly.

kacchi or any kind of Bangladeshi biriyani or tehari is made from chinigura or kalijira rice which is the aromatic rice with tiny fine grains. I know they might not be available in all places because these rices are rare and priced very high abroad but they are super aromatic and gives the dish a whole different taste which can not be achieved with common basmati rice. Basmati only looks good but doesn’t taste as good as these two. So in order to have an authentic kacchi experience one should use the kalijira or chinigura rice if they can get them nearby. Trust me, you would not regret it.

​​@@fatemawahab3725 we tried that, basmati is nothing but plain rice. No unique taste and fragrance, our chinigura and kalijira rice are fragrant rice. They have a unique scent, like you can't use them to eat with daily curries or fish. They are specially cooked on occassions

It actually takes 40 minutes sometimes.....depending on the boiling of rice.....so 1 hour is enough time coz you are sealing the vapour

its not authentic kacchi biriany reciepy.haydarbadi biriany is spicy. But kacchi is not spicy at all.2/3 types of nut,safron is skipped in this reciepy.use of green chilies instead of chilli powder.in authentic one they never use food colour they use safron for colour

3+ hours soak in vinegar is enough to make it tender so that spice can get in easily.
