How to Make Kareley Qeema Recipe by Cookcraft Delight
Ingredients:
For the Kareley (Bitter Gourds):
4-5 medium-sized bitter gourds (karela)
Salt (to taste)
1 tablespoon tamarind pulp (optional)
For the Qeema (Minced Meat Filling):
250-300 grams minced meat (beef, lamb, or chicken)
1 large onion (finely chopped)
2-3 green chilies (finely chopped, adjust to taste)
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon coriander powder
½ teaspoon red chili powder (adjust to taste)
½ teaspoon turmeric powder
Fresh coriander leaves (for garnish)
2-3 tablespoons oil
Instructions:
Prepare the Kareley:
Wash the bitter gourds and cut off the ends.
Slit them lengthwise without cutting all the way through.
Sprinkle salt inside and out, and let them sit for about 30 minutes to draw out bitterness. Rinse and squeeze out excess water.
Make the Filling:
Heat oil in a pan and add cumin seeds.
Once they splutter, add chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chilies; cook for a couple of minutes.
Add minced meat and cook until it changes color.
Stir in coriander powder, red chili powder, turmeric powder, and salt. Cook until the meat is well cooked and moisture evaporates.
If desired, add tamarind pulp for tanginess. Mix well and let it cool.
Stuff the Kareley:
Stuff the cooled meat mixture into the slit kareley.
Cooking:
In a large pan, heat some oil over medium heat.
Arrange the stuffed kareley in the pan. Cook, covered, on low heat for about 20-30 minutes, turning occasionally until they are tender and browned.
Garnish and Serve:
Garnish with fresh coriander leaves.
Serve hot with chapati or rice.
