This channel is produced by Japanese chef Taka-san using a different approach compared to other culinary videos. It is to create a Japanese cuisine community for the viewers to participate in. The contents and dishes are based on requests received from viewers and friends, a program created by the viewers for the viewers. It is our desire to solve questions and problems regarding Japanese cuisine through this Japanese Cuisine Community.

Taka-san, the host of this channel, has been working in the world of Japanese cuisine for over 20 years. At the age of 30, he became the head chef of a luxurious traditional Japanese inn where he worked for 7 years. In a nationwide poll gathered through leading Japanese travel agencies, his dish while working in the inn came second in the best dishes category. Taka-san’s cooking is very creative, however, chefs preparing food in traditional Japanese restaurants and inns have little or no space for creativity. hi Taka san, why did you use this particular cutting tecnique instead of a classic san mai oroshi on this fish? it is the first time that i see this method of cleaning, expecially for removing the guts
