Lemon Herb Marinade for Chicken
Ingredients:
½ cup olive oil
2 lemons, zest and juice
¼ cup fresh parsley, chopped
¼ cup fresh herbs (oregano, thyme, cilantro, or combo)
2 cloves garlic, smashed
lots of freshly ground black pepper
½ teaspoon salt (optional)
4 chicken breasts
Directions:
1. Combine all the ingredients together in a sealable zipper style plastic bag or mixing bowl.
2. Add the chicken breasts to the marinade and let them marinate for 30 minutes to as long as 4 hours, refrigerated.

Love this...so straight forward and passionate...rare combo. Just one question as I was watching another chef and he said he put the salt on just before frying because if you add the salt with the marinade it draws out all the moisture but he was marinating a steak so don't know if they react different or if it's because he was marinating overnight or something? Please let me know your thoughts. I actually came on here to get an idea of marinades with fresh herbs as I love to garden and so happy I found you because of how you show such a simple formula.

Which pepper did she use? White or black? Should I try make separate marinades with both and see how it goes?

Mazvita Ndawana maybe to late for a answer to ur question but black and white pepper r almost the same flavor wise white pepper os mostly used for presentation purpose for example if u dont want black specks in your white cream based sauces use white pepper hope thts helpful
