*Gennaro's recipes are usually very good, BUT this one is WAY off.* *1) The lemon zest & alcohol must steep a minimum of 3 weeks!* *2) He used way too much water, as it must always be a 50/50 split.* *3) That's way too much sugar, as it should be 25% of the total liquid.* *4) After combining all ingredients, they must marry another 3 weeks!*

I tried this. To quote Gennaro, "Why am I cooking so good?!". This home made limoncello quickly became one of my favorite after dinner digestifs, and my neighbor's too after I gave them some. Many thanks to you Gennaro for this and all your other videos and recopies, and please keep posting them for many, many more years.
I agree however i use just cheapo waxed lemons scrub off the wax and they work great. Been making my own limoncello for 20 years now and its so easy just make sure the alcohol is full of lemon peel.

Hi Gennaro. Thanks for the recipes. This came out amazing and my whole family loved it. I noticed that this recipe does freeze on the freezer. Do you know what ratios are required in order for it to stay liquid in the freezer?

In order to extract the essential oils & flavours from the lemon zest, only strong alcohol must be used, no less than 90% strength. It must be top quality Food grade alcohol, such, for example, as Grain or Cane sugar, (but if you want to adhere to the Italian traditions - then use only wine distilled alcohol). What you want is *_UN-denatured Ethanol_* - pure, high grade: Commonly used in manufacturing industries such as the Beverage and Food. Just google 'buy food grade ethanol' and your location to find a supplier. A knowledgeable salesperson in a liquor store may also be able to direct you.
Very timely video! I just picked up about 50 lemons from my neighbor. Big beautiful lemons! The recipe will change depending on what kind of alcohol you can buy (water/sugar amount). Here in California the law limits us to 120 proof (60%) as the maximum legally sold. There are online limoncello calculators out there such as 'LimoncelloQuest' amongst others. Ciao!
