Earthy, sweet Matcha Green Tea Ice Cream is the perfect treat on a hot day, and all you need are 4 simple ingredients! This homemade recipe will bring authentic flavors of Japan right to your kitchen.

INGREDIENTS
Option 1: Half and Half
3 cups (720 ml) half and half (Half-and-half is an American product and is a blend of equal parts whole milk and light cream)
5 Tbsp matcha (green tea powder) (1 Tbsp matcha = 6 g)
¾ cup sugar
⅛ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt)
Option 2: Whole Milk + Heavy Cream (I use this option in the recipe and video)
2 ¼ cups (540 ml) whole milk
¾ cup (180 ml) heavy (whipping) cream
5 Tbsp matcha (green tea powder) (1 Tbsp matcha = 6 g)
¾ cup sugar
⅛ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt)
Option 3: Low-Fat Milk + Heavy Cream
1 cup (240 ml) 2% reduced-fat milk
2 cup (480 ml) heavy (whipping) cream
5 Tbsp matcha (green tea powder) (1 Tbsp matcha = 6 g)
¾ cup sugar
⅛ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt)
Option 4: Whole Milk + Light Cream
1 ½ cup (360 ml) whole milk
1 ½ cup (360 ml) light cream
5 Tbsp matcha (green tea powder) (1 Tbsp matcha = 6 g)
¾ cup sugar
⅛ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt)

Yesterday ... I've made Matcha Ice Cream in custard base (Milk , Egg Yolk , Cornstarch , Sugar and Matcha) just using 5 ingredients Wow ... It's so delicious also 😍 This will be my favorite dessert all of time

I know its been a year but you can use a big bowl with ice and salt and a smaller bowl inside of it with the ice cream batter, then just mix it in there constantly until it becomes ice cream

Don’t buy the machine unless of course if you are making ice cream every day :) just use electric mixer, it works just as well

I usually use good quality matcha from Ippodo, they ship worldwide from Japan. If you’re in Australia I can also recommend Matcha Boy‘s everyday matcha. They get their matcha also from a team farm near Kyoto. I use medium priced or everyday matcha quality as I find the umami in ceremonial grade matcha too strong for sweets or latte but the so-called “culinary matcha” is usually not good for baking or cooking as the taste is not strong enough, it’s basically just green colour with a tiny bit of bitterness. Also some of these cheap matchas are from China, not Japan which is a big no-no for me. I’ve learned over the years that investing in good quality ingredients is crucial.

Since I’m limiting my dairy intake, would coconut milk suffice? Also, instead of sugar, I’d probably add honey or maybe brown sugar and sprinkle crushed pistachios and/or walnuts to give a crunchy texture. Looks delicious tho. Too bad I don’t have an ice cream maker☹️

If you mix the sugar in the green tea first it’ll dissolve better you might not need to drain it
