Charlie, I have no access to fresh spices. Can I use dried? I know it will affect the flavor, but I live in the middle of nowhere and could use your advise!
@Miss Mary. Yes you can use dried. If you use dried add 1/2 to 1 teaspoon of dried spices especially in the sauce. Remember to season slightly and taste as you go!

My wife and I made this lastnight and it was so good..I usually make my own but I've always used dry herbs but wow the fresh herbs really give it such a great flavor..had the whole house smelling good and even the kids loved it to...thanks so much for sharing Mr. Charlie

I saw this video, noticed some things, took some notes, and came back to comment. First off, I was unsure if this person was a professional chef (in any capacity), or a home cook. For me a big difference is presentation (between an experienced home cook, and a professional chef). I noticed this when I was younger, that people who are experienced high quality home cooks, the differences between eating at home and going out to eat was time, energy, and money. You went out to eat meant no dishes to clean, the person who cooks just gets to enjoy a meal as does the family. This person is that cook. If they are going out to eat dinner it is probably to: save time and energy from having to cook and clean, or to taste something new/get ideas. To me this person embodies the heart of what it means to be a home cook. Their kitchen is extremely clean, their dishes use fresh flavors, and they season to taste (their taste since they are the one eating it). The recipe is step by step, with a video for aid in instruction/understanding. This makes it easily modifiable for dietary restrictions, or personal taste. Secondly, I like how they incorporate fresh ingredients, as opposed to prepackaged dry seasonings (I am speaking of the herbs and vegetables they are using). Ultimately this gives you more control over your dish, which gives you more consistency (you here being the at home cook). Home cooking is a skill that has been historically under valued in our society, and I am glad this person has this channel, and hopefully they are earning their value in the market. I liked this video, and subscribed to their RU-vid channel. When I went to their RU-vid channel, I noticed they had a website (great idea in terms of commodifying your content). Based on what I have seen on RU-vid, I would also say they should add a Patreon. I haven't seen that many of their videos, but if they could do collabs that would be cool as well. I hope this person continues to have success, and continues to build a thriving internet/social platform.

This video reminds me of when i was a boy in West Monroe and my mom made spaghetti for my brothers, my dad, and me. She was taught by my grandmother who was born and raised in New Orleans. She was Sicilian. It was one of my 3 favorite dishes that my mother made. She was an excellent cook. Thanks for the memories.

I get the spaghetti idea from my Grandmother. Once I taste her spaghetti she made I had to find out how she did it, so I watched and observed. The rest is history. lol
When I make my spaghetti I use fresh garlic green bell pepper onions I sauteed all that together. I Brown my hamburger meat I use crush tomato and tomato paste. I pour my herbs in with the meat after it cook. Yes I do season the meat. I do add 2 tablespoon of sugar to cut the acid like you said.
@@CharlieTheCookAndrews I also make stuffed shell's too. If you decided to make stuffed shell's use Jumbo Shells and stuffed them using the same way as you make the spaghetti sauce. Topping is mozzarella cheese on top

This is the perfect dish for someone just learning to cook. The way you seasoned the noodles with the onion and garlic butter and parmesan...i could just eat the noodles like that without even the sauce! I like diced bell pepper in my meat sauce, but that is where each of us can have some fun with the ingredients.

Just made this tonight (at 2am) for the second time and it's really good. I make a big batch and keep some in the fridge and some in the freezer. Since I live alone and work night shifts, this is great for quick heat-and-eat meals. I got braver and put more Creole spice in it this time because I couldn't feel any heat at all the first time I made it. I should also add that when I heated it up at work for supper one night, I got comments from people about how wonderful it smelled. Thanks again, Charlie!

Charlie hi I am Julie and I live in New Orleans well actually I am a Jefferson Girl. I came across your meat sauce and I use all the same ingredients plus some beef stock and couple other things. I wanted to say that if you fry your paste off with your chopped onion and peppers on a low to medium heat and let it get darker in color it also gives the paste a richer more delicious flavor! It doesn’t taste so raw in flavor. It makes a huge difference in the flavor of your sauce, the finished product and I mix the Better than Bouillon Beef Paste with water to make stock which enhances the sauce also it’s wonderful! My grandmother taught me how to cook and she was a great New Orleans Cook! I just subscribed to your channel so I can start checking out all your recipes and I am so glad I found a New Orleans Chef today! Keep up the good Cooking ok! Julie

Hi Charlie, I'm still alive wiill be 75 in July LOL i was like you at one time and used sauce already prepared PREGO was my favourite. I would usually add my own dry ingredients to it though. So delicious! I didn't even have the poultry seasoning. I also added green and red pepper. Also added fresh parmesan. this is the best sauce I've ever had.
