Made this and it was very good.. Charlie man I am taking credit for your dishes. Like you said to the one guy that was rather rude you can tailor it to your taste and liking. Heck you can even add to the ingredients or take away but you gave a foundation. Me myself I like to sautee my shrimp for 2 mins then add them back for 5 mins only cause they can get tough but people should figure out how they like their food. Keep up the good work and keep cooking cause I am taking credit for your recipes man. As for Leonard man you took the high road he sound plain ignorant. You can critique someone with respect, something he needs to learn.. Last time I checked he is on your page and you were not on his.

Notice how Charlie didn't add any oil to his boiling noodles, very smart. people love adding oil, turns out it just makes your sauce slide off the noodles. the ending result was perfect

Today's dinner is Pasta It's 2:15am in the morning. Thinking about what I was going to cook. I have always use bottle alfredo sauce. Can I add different meats to this pasta, (example: crab meat, crawfish and lobster.. I will let you know how it came out. I will call it a seafood pasta. OMG this dish is divine! Made this tonight after seeing your channel first time today, ground up my own Creole spice blend, used grated lime zest and splash of juice is definitely permanently on the menu and no not greasy at all even tho' I added a good splash of olive oil to butter oh and used Pecorino instead of Parmy. I tried this pasta recipe for Christmas (I wanted to try a different pasta dish from baked macaroni this year). I was a little hesitant at first because I'm not a big fan of angel hair noodles but I used it anyway it tasted SO GOOD! Everybody loved it, including myself. I was asked to make more lol. I grew up in Mobile and as a religion, I Never "deveined" shrimp. As I grew up and made white sauce I found shrimp poop is not an attractive addition to the final presentation. Now my philosophy is: "If the shrimp was getting rid of It, why wouldn't I" Thanks Charlie, for a great recipe!!

Great recipe but I feel like your shrimp is going to turn out overcooked and gummy cause it was cooked way too long. My experience, shrimp should not cook no longer than 8 minutes.

I'm making shrimp pasta tonight. I just watched the more recent version of this recipe, as well as this one. Interesting that you add the shrimp after the cream on the later version. That makes me just a bit nervous, in that I like to be able to see that the shrimp is cooked. On the other hand, by adding it after the cream, you can let it reduce so that there's no chance of overcooking the shrimp. :) Anyway, some great adjustments for me to make in my dinner tonight. Thanks.
I wanted to say thank you so much for your time and effort. You are so consistent and detailed. I am from the upstate part of South Carolina so seafood isn't our focus. Growing up I mostly learned how to cook soul food. (Chicken, porkchops, etc) Yet I LOVVVEEE me some seafood. Lol So I was frustrated that I lacked the ability to prepare certian dishes. I foudn your channel and it's been the greatest thing. Because of you I've prepared some of the best cajun pasta, red beans and rice, and the catfish? Please. I've had friends request I make catfish at the next cookout. Lol. You are so wondeful. You are so appreciated. I thank you again.

Yes in some recipes I don't add all the vegetables/seasonings i prepare. There is no reason for that it's just the way i am. If i feel that I'm going to add too much onion then i won't add all of it. Hope you understand!
I worked in a seafood restaurant, on the Northshore, that served pan toasted Reising's French Bread with the seafood pasta. It was so delicious with the sauce that we had requests for seconds on the bread. Split the loaf and cut into serving size pieces and butter each piece. In an iron skillet, toast butter side down until browned and the crust starts to crinkle from the heat. As it cools it gets crispy and delicious. I just about can't eat the pasta sauce without it. Deli french bread is not the same. Only Reising's or possibly Lidenheimer. I love your cooking!
