Meringue cookies are very easy to make as the main ingredients are basically egg whites and sugar.
The 2 key things for success are to get the egg whites whipped properly so they get stiff peaks, and to bake them long enough in the oven to dry out. Don't cheat and turn the temperature up! That will only result in burning the meringues on the outside, but not dry them out on the inside.
Ingredients:
4 egg whites
1 cup sugar
1 tsp vanilla
1/2 tsp cream of tartar
1/8 tsp salt
Bake at 225 degrees for 2 hours.
