Those tamales does look great and remind me of the time when I was young and lived with my father and step-mother in Michigan and they ordered tamales regularly from one store and picked them up later on. The last time I ate some was about one year ago when one store in Malvern, Arkansas started selling them and then stopped after the one making them left the area and they didn't have anyone else to make them.
Loved this!! Have you heard of Calundas? I don't know if that's even how you spell it. They are similar to tamales but smaller, almost like a triangle. I think they're from Michoacán, but I'm not sure.

As I'm getting older i see the older generation getting diagnosed with diabetes and high cholesterol and blood pressure. Its important to keep traditional recipes but we also have to adapt and update recipes for healthier choices. I really want to try this and see what my tias and abuelita think.

It’s always very interesting watching your tutorials. Tamales looks something like Chimaki, in Japanese it’s called Chimaki but it’s originally a Chinese dish. Chimaki is wrapped in bamboo leaves, and I believe some southeast Asian countries use banana leaves and others as well. The filling is glutinous rice and meats and lots of others as well. The idea of having some kind of starch stuffed and meats etc in it steamed in both cultures seems comparable. Very fascinating how we are all related in someway.

My dear sweet sisters, Steph and Cloud, I want to thank you so much for creating this channel an valuable content. I father was Mexican and my mother is English and Scottish. We grew up in Los Angeles near my dad’s family. We had such yummy holiday meals. My mother learned to cook Mexican food from her in-laws and then taught us girls. With that said, I have learned, truly learned, so much from this channel! Steph, I appreciate your hard work researching and testing recipes wanting everyone to be successful in the kitchen. Cloud, you are her biggest fan and have given your sister the support and encouragement she has needed (along with your tech expertise). Everyone has struggles and ways to deal with them. I love to cook for my family, friends, and anyone lol; I also love to sew. I live now in SW Louisiana and we have been hit with 2 major hurricanes in 6 weeks. My kitchen and my sewing room were destroyed. I do not tell you this for you to feel bad for me. I share this with you because for weeks I was evacuated and unable to do either of my favorite things. I had already been a dedicated Views follower, but with work sometimes could only watch on weekends and holidays. During this time I have been able bing watching and saving my favorite Views recipes. We now have a camper with a very nice kitchen (as campers go) ,thanks to my sweet husband, and I have been able to crank out the food for him, my family, and neighbors. When things get overwhelming he asks me, “Where are you going?”, and I say, “to cook something” 😆. Is the hibiscus better than jackfruit? I'm not a big fan of jackfruit tamales. Is this comparable to beef flavoring? I'm just curious I would have never thought to use hibiscus for the filling. I've been struggling the last couple years I've been vegan to come up with a filling that is good for my tamales.

Yes. Tamale season is coming. Usually, I only make them around Christmas time because I go overboard. I say I'm only making a few and end up making about 12 dozen (it's only my hubby and I). I end up freezing some give some to a couple of friends, coworkers and my pastor. I need to get an instant pot and make some for my hubby. He will love them. My mom used to put just meat. My mother in law puts olives, my husband has make them for him like you, minus the raisins.

After steaming my tamales for an hour and a half, my tamales were really doughy. I know my dough wasn't too wet because it didn't look near as wet as yours. Any help would be appreciated. Thx!

I did not know you could eat the actual hibiscus flower! One thing you should add to your masa is baking powder - it will make it fluffier when it's done steaming - promise!
Can you tell me please why do you strain and rinse your hibiscus And then add water? I'm thinking of all the goodness in that liquid ... is it bitter if you just leave the liquid in from soaking?

Hi, Have you tried heavy wipecream, oil or butter instead of lard or vegetable lard? How much do I use oil or butter? I think that you have wiped the lard the same way I can use heavy wipecream until it turns into butter.

I have never thought of using a pressure cooker for tamales. In your opinion which is better? If you had the time would you go the traditional way or continue pressure cooking way?
Im glad you take a break from making them by hand.its been like my 5 time making tamales this past two I did them on the stand mixer it's so much helpful rather than needing the mass for a long time I just made a batch and cooking them as of now ,I need an exact amount of mabteca for a whole bag of maseca para tamales what do you recommend the amount for a bag .
