soaking and cooking or grinding to powder makes them more digestible. Soaking the millets overnight ensures that you break down the phytic acid in them. Always recommend to soak the millets before using them in cooking or whatever way you want to use them. Hope helpful and please check the channel for more millet recipes dear🙂

@@ganeshkondhalkar2513 Rama ji will be the best one to answer this, but I feel, storing is a function of individual geographies and systems operating in each home. Climatic conditions, humidity, home hygiene, who is handling the grain routinely, all these determine the life of the dried millets. Food fungus is the worst risk. Maybe do 2 cups at a time and refrigerate it as a rule. Please let Rama ji answer. Mine is a lay person opinion.

Can we mix many millets together and grind .??
@RamaTraditionalRecipesInstant
It’s not good to mix millets and consume dear. Every millet have their own functioning based on the fiber content in it. If we mix all millets and make flour out of it and consume.you won’t get enough fiber to our body which is needed for particular organ to function in our body. It always recommend to soak millets at least 6 to 8hours/ overnight. Soaking the grains help us to release the phytic acid in it. Phytic acid prevents absorption of nutrients and may cause digestive issues. So it is ideal to soak millets before cooking them.

Millet is a whole grain rich in fiber and packed with protein, antioxidants, and nutrients. It may have numerous health benefits too.Millets are of several varieties, and most of them are used in the replacement of rice because they are gluten-free and is considered the best alternative for rice. So we can cook Millet, like most other grains, is usually cooked by adding it to boiling water .Just like the way we cook rice regularly. Both millets and quinoa are grains with distinct characteristics and nutritional profiles. Quinoa, a gluten-free pseudo-grain, has more protein than other cereals. and millets are rich in fiber. Millets are so many types like little millet, foxtail, barnyard, Ragi , jowar etc. Both millets and quinoa helps for weight loss too.

I understood that the thorough rinsing of millet is required because of the saponins in the coating, which gives a bitter taste. And the overnight soaking has the role of neutralizing the phytic acid which is an enzymatic inhibitor (dry seeds are pseudo-dead, that's how they survive for hundreds of years, then, when water comes, they become alive again, their enzymatic life being revived). The opinion of a real specialist would be, otherwise, welcomed...
