On High, the first ounce of my brew percolates smoothly, then even after I turn the heat down to Medium or Medium Low it still spurts. So I’m not entirely convinced about what this video shows. Not to mention, the cold towel bit at the end looks like a myth. A cold towel on the bottom container isn’t going to cool the top container fast enough to change any flavoring. Conduction doesn’t work that fast.

This is probably the super extra proper way of doing it but, actually, most people I know here in Italy don't bother at all with stopping the brewing and instead leave the pot on the stove until the level of coffee inside reach the fountain-thingy in the middle. When that happens the pot starts making gurgling noises that signal you the coffee is ready (we say "sta salendo il caffè" AKA "the coffee is rising"). That way you can put the pot on the stove and do other things without having to watch it constantly.

This video is not the correct way to do it. The correct way is the traditional Italian way in the moka pot video by Annalisa J. The results are perfect every time.

Two more tips: put a little water in the upper part of the bialetti, so the first drop won't burn. After it's finished stir it so the particles mix

You do realize the whole pot is really hot right? Aluminum heats up hotter than stainless steel. By then it's probably pointless because you're waiting for pressure to build.

I just run the bottom part of the moka pot under a cold tap for like 5 seconds and it stops brewing. The tap is right next to my stove so it makes perfect sense. I don't want to involve my fridge in my coffee making now :)

Warning: be sure to close the lid before brewing. What is shown in the video is incorrect. I followed the video and the pot overheated and spewed hot coffee at me and the walls. I nearly suffered a burn.

Boil the water before adding to the pot, and use low flame/heat throughout, that should solve the problem

@@thatguy-555 Yeah mate, these Moka pots are quite old, I've only started using one yesterday, and learnt some techniques from youtube, I managed to make two cups without issues so far. Also make sure to fill the pot bellow the relief valve to allow for pressure relief in case it over pressurised.

In my experience, you must develop a 'recipe' and technique for each brand of coffee you use in a moka pot. If the coffee is too strong, grind it larger. Too weak, grind it smaller. Once you get a particular coffee dialed in, you can make a very good cup of coffee that has that 'pop', when you drink it (I don't know the proper name for it, but you'll NEVER experience this perfection, buying a cup of coffee from some chain.)

EXCELLENT tutorial. I got a Moka pot along time ago but never liked the coffee it made. Now I have to go away for two weeks and, of course, cannot take my small espresso machine. I'm confident that I can make the mocha pot work! I bet it will also be great Crio Brew cocao beverage.

You don’t want to screw the base on too tightly but snug. I returned two of these before realizing that I was over torque the thing. It will cause leaking

Great video! Thanks a lot! My wife and I recently traveled to Cozumel and had cuban coffee both on board the ship and when we hung out in Miami waiting for a flight. Needless to say, I ordered a 3-cup Bialetti IMMEDIATELY! However, my first couple of batches had the burnt taste. The hot water/low heat tips made my current pot PERFECT! Thanks again. I now have a fantastic way to relive our vacation over a small cup of coffee :-)

+Jan Pleva (TheERROR) - Thanks! This was actually my very first video, and I had no equipment at the time. I filmed it by holding my smartphone with a pair of tongs under my chin, held together with a rubber band. LOL So my coordination was a little stunted trying to balance this stupid contraption I made. I was originally going to leave-out the outtakes, but I thought it would be helpful for other people to see some real-world coffeemaking with all its occasional errors. Luckily, I've made small upgrades to my equipment since then, so I'm not doing too much chin-filmmaking anymore. ;) Thanks for you comment and for watching!

A Bialetti like this is aluminum, so don't let it sit in water too long, or put it in a dishwasher (it will become oxidized and ugly, but still functional). Moka pots are also available in stainless steel, and go through a dishwasher very well (Bialetti Venus, for example). A silicone gasket is much better than the rubber gasket.. the rubber gaskets get hard, are difficult to clean, and begin to leak.

+Marlene Lee - Glad I could help! I made the same mistake myself when I first purchased mine. I bought a 1 cup, and in comes this tiny little baby moka pot in the mail! It's kind of adorable though, and in the long run, I wound up using it more than the 3 cup one I eventually purchased. Just bought one of these at the Goodwill store for two dollars! Thanks for posting the steps to use it! I am quite curious though and wondering why you didn’t use the small burner on your stove? The large burner seems like overkill. So, here is my review after making my 1st cup, which was delicious . It works well for one person and one cup, maybe two smaller cups! But the base becomes very hot, as well as the grounds which are hard to remove when wet, so it does not work well to then make more for friends! This is probably why they have fallen out of favor and espresso machines have become more popular! I set it on my small eye burner on stove with a setting of 7 and it brewed perfectly! I used Cafè Bustelo espresso style coffee!

To make more espresso for friends, buy a bigger Moka, at least the 6 cup size. Italian households all have several different size Mokas. It has not fallen out of favor among people who know the correct Bialetti technique. 99% of the tutorials on RU-vid are wrong. For the best flavor search for "Annalisa J Moka pot" and "Il Barista Italiano Moka detailed." I use Bustelo too, I love the low price; but there are better Italian espressos to use also, and I've heard La Llave tastes smoother than Bustelo so I'm going to try that.

Next time try this. I have a stove top espresso maker too, and I'm happy with how it brews coffee, but if you really want to get the full coffee flavor along with all the notes then do this. Prep the coffee maker as if you are going to brew a full pitcher, then turn it up to high heat but watch that it doesn't brew really fast, let the pitcher fill up slowly by adjusting the heat. let it fill just a little under the middle of the pitcher and take it off the heat and pour out the coffee in a cup. You now have an espresso that has all the notes of the coffee and is not watered down.

Thank you for the video! I've only ever used moka pots to make Cuban coffee. My brother-in-law's mother is Cuban and she was the one who introduced me to noka pots for the first time and we've always used Café Bustelo or other Cuban espresso-ground coffee. I've never seen someone make coffee with regular coffee made for drip brew. Interesting! I love my moka pot, a good cafécito makes me feel like I can take on the world.

Very helpful video. Quick question on grind size: you suggest a more corse, drip-grind. But other sites say to use a fine , espresso-like, grind. Why should I err towards you suggestion and not theirs? I guess the obvious answer is that I should experiment But anyway, thanks!

Hi I just bought a 3 cup moka pot and have seasoned it, so now I'm ready to drink the coffee. But what am I doing wrong if I don't get that lovely crema as it comes out of the spout? I get absolutely no crema... :(

You gave all the information for the better use.Very nice. Remember that a cup o moka coffee has about twice the caffeine of an espresso, even if it doesn't seem to be by its flavor.

Great video! I can almost smell the coffee from my screen! Btw, I have a question. I have a moka pot which makes 2 big cups of coffee. However I only drink a cup a day and thus pour water halfway below the safety valve. The coffee tastes ok but I read that I can improve the taste by pouring in the correct amount of water. Am I doing it wrongly?

+Dalen Chee - This is a good question. The reason companies like Bialetti sell so many different sizes of moka pots, is because each one is specifically proportioned to create the best brew using the grounds-to-water ratio of the pot. While you may be able to brew with less water or less grounds, the brew will taste best when using the amount the pot was designed for. If this were a non-pressurized system (like a drip coffee maker or french press), it wouldn't matter as much. But because moka pots are pressurized, the amount of water and coffee each pot holds is specially formulated to withstand the amount of pressure your pot will produce when heated. :) Sorry for the long answer. Hofmann's technique and hacks are all wrong. The Bialetti instructions are correct and are based on science. This video makes quite a few errors too. 99% of the tutorials are wrong. For the best tutorials search for "Annalisa J Moka pot" and "Il Barista Italiano detailed Moka."

Why should we keep the lid open while brewing? What improvements does that have over a closed brew? I would guess it keeps the temperature down but I really have no idea.

+Lucid - Great question! Keeping the lid open isn't necessary, but I find it helpful for seeing when the brew process is nearing the end, so I can yank it from the heat just a wee bit early. This helps prevent your moka pot from sitting on the heat too long and developing a "burnt" flavor in your brew. Hope this helps! Thanks for watching!

The biggest thing keeping the top open does is that it keeps you paying attention to what you’re doing. Moka pots are a completely manual coffee making process, so YOU are a key part and you can’t just walk away like you can with a drip machine. If you do, your coffee will boil, taste like road tar, and maybe explode on you. And that’s no fun. Watching the coffee come out will also tell you what the moka pot is doing. Ideally, you want a calm, continually flowing stream of coffee coming out of the stem that fills the top chamber almost completely in one go. If it’s too frothy or sprays, the burner is too hot. If it doesn’t flow at all, the burner is too cold. If you’ve got the burner up full and it doesn’t flow very well you’ve got too much coffee in the basket. And when the coffee starts to turn pale and foamy, your bottom chamber has run out of water and you need to take it off of the heat immediately.

If you follow all these instructions, but you add a little more ground coffee with the same amount of water, you will make an actual Espresso

This is cool I need one of these. I make espresso at home, but when I hike I make Turkish coffee on a bonfire. I might use this when I go hiking to try something different. Thanks!

Gentrit Bajrami camp stove on lowest setting. leave lid up, as soon as you see it brewing, shut lid and remove from heat.

There will still be a bit of steam coming thru and too much steam at the end can cause the coffee to become bitter so you cool the base to stop the steam.

I'm putting sufficient water. However, the amount of water which is being filtered is very little (the chimney inside is releasing mostly steam. It's releasing very little amount of coffee that too not continuously). Am I doing something wrong or the moka pot is defective?

Nice tutorial, thanks. I should see your video before buying this machine. I noticed it makes coffee named Moka eXpreSS. And you are right - it doesn't make Espresso. It cannot create the pressure that all espresso machines do.

I have a standard hot water heater, so I do not use hot water from the sink if I am going to consume the water, or anything that was in it. I will heat cold water in a kettle first. That’s just me though, I’ve seen the inside of some hot water heaters that failed, and it can be nasty. Using cold water is going to take a little longer to heat up, but in the end might be safer. The water in the pot isn’t boiling long enough (IMO) to destroy the nasty stuff. With that said, I can be totally wrong. It’s just something I’ve been doing for a long time. Old habits are hard to break. Love the towel idea.

Nice and it is technically an espresso how it used to be done!! For better taste heat up water separately once at boiling fill the base of the pot like video shows and use medium to light roasted coffee you will then get the correct vintage espresso!!

Moka just makes moka cofee, not espresso (moka il lighter and with no cream). Mokas were invented years after espresso machines as a simple, fast and cheap way to have a good coffe at home. Boiling water separately is a nonsense, moka is designed to work with fresh water, the heating is meant to be done inside it. To get good results you only have to avoid using heat too high :)

I have a gas stove, so I use a heat diffuser. It prevents direct flame on the pot and prevents overheating, resulting in a smooth extraction flow. The diffuser also protects the pot.

it COULD stop the water from moving through and then the pressure would build up very quickly and the release valve would go "PSHHHHH" meaning it stopped the moka from literally exploding.....while were on the topic, if you fill up the moka over the release valve it renders it useless and if something goes wrong (like grounds being extremely fine and tamped toooooooo hard) it could explode :)

Tried my first two times in 3 cup size and it was very coarse. Not sure how much coffee to put in for a latte nor how much water. Could you shed some light on this? Thanks.

There is only one correct amount of grounds and water. Fill with water to the steam vent. Fill the basket until it is level or ever so slightly rounded. The quantities are not adjustable. If you are having issues, it is likely your grind size.

The grinder is the problem. Get a good coffee grinder (manual or electric) and then you will find out how a fine grind should look like.

Quality grinder helps. Make the grind almost as fine as espresso grind but not quite and don't pack the grinds in the basket. Just level it out.

I also have a good hint. Not for actual making part, but for part that comes after. Do not leave your moka without washing after making coffee for more than a day, or the mold will grew inside the water cup. And once it did, it's really hard to get rid of it, i gues spores stick inside even after washing, so it keeps reapearing.

Just do a few "dry" runs with no coffee in it if you've got mold issues, and scrub out the filter cone with a pipe cleaner folded in half once, and dry it on the stove. This should kill and physically remove any spores. You can also kill them using rubbing alcohol or ethanol, which is a common sterilization technique used in mycology (the study of fungi and spore bearing fruit bodies)

If you have an electric burner, you want to start with heat on high to bring the water up to boil, then turn the heat down (not off) so that the coffee slowly comes through. Some say that as slow is possible is best. If you turn the heat off, you'll never get coffee. If you have a gas burner, I usually turn the flame up so that it's almost as big as the base of the moka pot. If you go higher than that, you'll melt the handle... and yes, still turn it down when the coffee is almost ready to come through. You'll notice a wonderful coffee smell, right before.

Hello Moka Bee, thanks for your video, I tried to use coffee special for moka pots for my stainless steel Bialetti, the coffee is very fine, nearly as fine as an espresso, but it seems my moka pot gets a bit blocked or start sputtering when less than half of the coffee is made, however a coarser ground works better, a lot of confusing information online, not sure why Bialetti advise not to use filter coffee type and only use special moka pot grind

Just happensanced on this machine online and was iffy as to my decision to get one UNTIL WATCHING YOUR VIDEO thanks... Now I am confident enough to buy and try... Only thing that gives me some pause is that we use GAS (not electric) thus, might have to place this thing inside a small CAST IRON pan to get it to work right. Will update THANKS

I think they differ only in the size of the grain with which the beans are ground. For the moka with a larger grain than the espresso. I personally use "lavazza qualità rossa" that is recommended just for the moka.Various brands have dedicated products :)

It is not ESPRESSO! It is percolated coffee made in an aluminum pot that leaches that yummy metallic taste into your brew. Espresso requires forcing nearly boiling water through the grounds under pressure. Duh......

This a bit oversimplified. The ration between water ans coffee will differ depending on the roast. I use dark roast. In a 6 cup I do around 29gs of coffee to 220gs of water. A grind slightly finer thenin-between filter and espresso . I usually surf the temp by taking the pot off the stove once it begins to run and when it slows put it back on. The second it starts to foam and spurt run cold water over the boiler. It takes some experimenting but eventually you Crack the moka pot code.

Whenever I see people using this on RU-vid, the coffee is always dark, thick, and frothy. Whenever I use mine at home, it’s brown and watery. I wonder what I’m doing different

Please preheat your water. I preheat mine to 185f. It prevents overheating the grounds which makes bitter coffee. It brews faster. And we have the same stover and I just out the back right Bruner on 8 and it brews within a minute.
