Can’t wait to try this recipe. My older high school friend was Thai and her mom cook Kai Moo Daeng all the time loved staying for dinner in red pork night 👍🏽. Haven’t had it since high school over 25 years ago but this looks the most like her moms than any of the ones I have seen.

This is 100% the Thai way. I was taught by a fantastic Thai Chef. This is how we eat at home. In fact all the Thai recipes are the Thai way not copies from others. That's a cracking piece of pork shoulder..Looks an expensive piece of meat..I think i would have to ask my butcher for piece that size..Looks superb..Supermarkets down my way don't sell like that .I wish they would..That's definitely an impressive plate of food Richard..Credit were credits due..

Alex use pork loin mate - same results or any other piece of pork you can get.

@@BackyardChef Good advice Richard i didn't know that..As i said i struggle to get the right size of meat..I've seen pork loin but wasn't sure if it would be good enough..I'm not an expert when it comes to cuts of meat especially for char sui..It's the big slices of meat i like..I can normally only ever buy steak size cuts and doesn't give you the perfect slice..I think i might pop out today and pick some up..Thanks again Richard

Haiyah!! Uncle Roger very unhappy. You not even use red fermented tofu, instead you use food dye and not get same flavor. No no.

Ha Ha Ha - I'm not cooking Chinese and Here in Thailand RED food dye in everything powders liquid. Made me smile though - Thanks. Best, Rik

@@BackyardChef Not quite so. Yes, the corner-cutters, certain street vendors, and there are plenty, use the red dye. I have lived in Thailand 20+ yrs. I know all about "yen ta fo" and that you can find fermented red tofu in any ma&pa food shop in the smallest of tambols, in which I live. I tried making 'mu daeng' similar to your recipe -- it just didn't taste the same. When I used the red tofu, it matched the taste I got from the better restaurants here. Try it. It's not a difficult or expensive change. Your "gui tiew", "khao mu daeng" and other dishes will be much better. Haiyah!!
