Excellent video! Thank you for posting this. I thought that one had to use rennet to get the elasticity needed for mozzarella. Obviously, that's not so. Thank you again.

@@aromaofzanzibar Well, well. I'd call my first attempt a success, even though I didn't get all the way to mozzarella. I believe I made at least two mistakes. I chose 165F, which is much warmer than you recommended. And, I think I stirred it too much. Rewatching your video I see that you aren't really stirring it as the curds form, you're swirling around. My largest curds were 1 to 2 cm and no big lumps like you got. Tomorrow, we try again. Thank you again!

Follow up: Yes, it works fine. It just takes a little practice. I use Walmart whole milk (red label, Pasteurized). Works fine.

For ricotta cheese the milk has to come to a boil, mozzarella you just heat up the milk

Hi Please can you advise what the water temperature should be to make the mozzarella stretchy? Please could you also explain the difference in "taste and texture" between the way you have prepared it versus when it's made with rennet. Thank you

140 to 160 F is the best to stretch the cheese coz you want the cheese to have an internal temperature of atleast 135F. If you have rennet its always best in text and taste compare to the use of vinegar but then not everyone has access to rennet.

I was using raw milk that was soured already or clabbered and I found when I started heating it up it started creating mozzarella cheese without adding any vinegar? Have you ever heard of this happening? I wondered if the lactic acid in the sour milk was enough to start this process? So I added some salt once it started forming for taste. It melted up after I made it just like mozzarella. I'm going to give your recipe a try with fresh milk next time!

Hi Thank you for your earlier response. Can you please address a couple more questions - It appears you dip the cheese in hot water initially for 2 minutes, you take it out, squeeze out the water and then put it back in the hot water for another 1 minute. Please confirm. Also is it important to wrap in plastic or can you use cheese cloth for wrapping? When storing in the fridge for 2 hours, is it the ice compartment that you store in or at 4 degrees centigrade? Can the cheese be grated? Many thanks

I used plastic wrap but if you want to use cheese cloth it will be fine. The 2 hours resting period is in the fridge and not freezer am not sure what centigrade is my fridge and yes it can be grated

So i tried it with grass fed whole milk unfortunately i am unable to get unpasteurized where i am. It turned out more like a cream cheese or ricotta..tastes fine. Do you think i made the milk too hot or too cold.

When milk is pasteurized the enzymes that help build the foundation of the cheese are destroyed that's why it is advisable to use unpasteurized milk
