RECIPE
▼ Ingredients
(~for 3 small muffins)
Unsalted butter 35g
Chocolate ~70% 15g
Milk 15ml
Egg 35g
Brown Sugar 18g
Sugar 18g
Cake flour 45g
Cocoa powder 8g
Baking powder 1.5g
▼Instructions
1. Melt butter and chocolate, add milk and eggs
2. Add brown sugar and granulated sugar
3. Sift in cake flour, cocoa powder, baking powder
4. Bake at 170 °C / 338 °F for 35 minutes

The egg white of one large egg is around 30 to 40 grams. Therefore, you can get close to 35 grams of egg white out of one large egg. You may need to add a little egg white from a second egg to get the full 35 grams

I tried this recipe. Because of a mistake, I added double the sugar but the cake was not too sweet. To be honest, the muffins tasted quite similar to madeleine😅

Ingredientes (~ 3 muffins pequenos) Manteiga sem sal 35g Chocolate ~70% 15g Leite (não diz que tipo, suponho que seja integral) 15ml Ovo 35g Açúcar mascavo 18g Açúcar comum 18g Farinha de trigo (ali diz farinha para bolo, mas dificilmente você vai achar isso em supermercado convencional) 45g Cacau em pó 8g Fermento químico 1.5g Modo de preparo você vê no vídeo, eu só sei traduzir o inglês
