These beignets generously coated in powdered sugar and served with honey or hot fudge are an absolutely delicious French treat at any time of the day. ►Ingredients:
3/4 cup warm water
2 ¼ tsp Rapid Rise Yeast (or Active Dry Yeast)
1/2 cup Sugar
1 Egg
1 Egg Yolk
¾ Cup Evaporated Milk
2 tsp Vanilla Extract
3 tbsp melted shortening
½ tsp Salt
1 tsp Nutmeg
2 tsp baking powder
3 ½ to 4 cups Bread Flour
Oil for frying
Powdered Sugar (for topping)
Honey (optional)
Hot Fudge (optional)
Rolling Pin
Pastry Bench Cutter Scraper (Pizza Cutter)
Electric Stand Alone Mixer (not necessarily, but makes life easier)

►Instructions:
1. Begin by creating our yeast mixture. Combine ¾ cup warm water (between 100 - 110F), 2 tsp yeast, and 1 tsp sugar. Whisk together and set aside for 10 minutes or until bubbles form.
2. In your stand mixer bowl, whisk together 2 eggs, 3/4 cup evaporated milk, 2 tsp vanilla extract, 1 tsp nutmeg, remaining sugar, 1/2 tsp salt, and 3 tbsp melted shortening. Stir well until nice and smooth.
3. Once the yeast has bloomed, add it to the stand mixer bowl and whisk it together with the egg mixture until everything is well combined.
4. Add half of your bread flour, stir until combined. Add a little flour at a time until the dough no longer sticks to the bowl. This kneading process should take at least 7-10 minutes to ensure the gluten is getting stretched.
5. Next, remove the dough from the mixer bowl and place it in a greased bowl, cover it with a kitchen towel and let it rise preferably in a warm spot for about 2 hours, or until it doubled in size. (I place my bowl in the oven with the light on).
6. After 2 hours, roll the dough out onto a floured working surface to about ¼ inch thick (not too thick, not too thin) and cut the dough into 1 ½ to 2 inch squares. Cover with a towel and let it rest for about 30 minutes to let them proof.
7. In the meantime, preheat our fryer to 340F. Once the oil has reached the temperature, carefully place the cut dough into the oil a few at a time, and fry them until golden brown.
8. Carefully remove from the oil and transfer to a wire rack to let them drain the excess oil off.
9. Wait for oil to get back to proper temperature before frying next batch of beignets.
10. Cool beignets several minutes then dust generously with powdered sugar and serve warm or at room temperature with honey or hot fudge.
