Today I made easy and tasty candy, Nougat.
Nougat is a confectionery that is very old that there is a record that the ancient Persians ate it a thousand years ago.
Egg whites, honey, and nuts are the main ingredients of Nougat.
In France it is called Nougat de Montélimar, in Italy, it is called Torrone.
Nougat is very common and well-known here in the United States.
It's white and chewy filling inside chocolate bar like Sneakers.
It looks complicated to make at first glance, but the basic process is exactly the same as how to make Italian meringue,
If you think of it as an Italian meringue with a high ratio of syrup, it will be easier to understand.

▶Ingredients (for 1 rectangular mould : width*length*height 28.5cm*20.5cm*1.8cm)
50g water
250g sugar
250 g honey
75g starch syrup
55g egg white
8g vanilla extract
150g Almonds
200g pistachios
100 g hazelnuts
40 g cranberries
Nuts can be changed to your liking.
1) Boil water, sugar, honey, and starch syrup in a pot at 140℃(285℉)
2) Continue whipping while pouring 1) little by little into the frothy egg white.
3) Whip until the nougat comes up white, fluffy, and firm and cool to some extent.
4) Add toasted nuts and cranberries and mix.
5) After filling the mold with nougat, make it flat, then cover it with wafer paper and let it cool for at least 4 hours.
(If it is not fully cooled, it will not be cut neatly. Let it cool sufficiently overnight)
6) Sprinkle starch on the knife and cut the nougat into the desired shape.
*Storage: Since it is a confectionery with very low moisture and mostly sugar, it can be stored for a long time at room temperature. (For about 2 weeks) Cut into bite-size pieces and wrap individually in a candy wrapper. It is recommended to store in an airtight container with a desiccating agent in summer.
