Hello champions these collard greens are super easy and delicious. They do not require a lot of fuss to make. Hope you enjoy the video.
Ingredients
2 or 3lb Greens
1 or 2 tsp Hot Sauce
2 tsp Vinegar
1 tsp Bouillon Cube
2 tsp Onion Powder
2 tsp Garlic Powder
2 Hamhocks

Wow!! Thank you for your awesome support and kind words. Do you know that you’re the first person that came to my channel that knows about old school cooking nobody believes that you could just put water in your greens and get the best broth ever.!! I was taught how to cook by my grandmother, but sometimes I don’t like to do her recipes because the bigger RU-vidrs take my recipes and go viral and I get very little views but I know that I’m going to be able to show all my subscribers how to put love in food very soon thank you again. Thank you!! I always pick my greens. I grew up with salt pork or ham hocks but later I learned to use bacon ends, chicken broth, a pinch of baking soda (makes the greens so tender!)

Yes I know people who use chicken broth but your right about baking soda although winter collard's don't need it they're so much better than the summer one's.

My first introduction to real " Soul " food was while serving in the Military and stationed in Gulf Port Mississippi. On my off duty time I would often go into town to basically relax. During my time in Mississippi I made friends with a Black Family who's Father was a Barber on our base. I was invited to have dinner with them and I've never tasted better 👍❤ I'm 77 and obviously retired these days but I'll never forget the kindness and generosity that family showed to me.

You fry them to concentrate the flavour of the greens until they wilt down and watch you don’t use too much water. It’s a balance of whether you want a lot of pot liquor or to have more flavourful greens.

Don’t the ham hocks need to be tender falling off the bone almost before u add the greens cause the greens will be done and the ham hock won’t be done? Just asking. I cook my ham hocks tender before adding greens.

I always cook them first until tender and the fat is rendered, remove from the broth set aside to cool then remove all the meat and add back to the broth and greens.

Kick it up a notch and replace the hammocks with country ham!! Cut the country ham into silver dollar size pieces and fry it in some bacon grease. Then put that in the greens. Deglaze bottom of skillet where you fried country hams with a little water then pour that flavor into the greens too.

I made these collard green yesterday(06/24/2024)I went directly by your instructions, as I put them a pan with bacon grease and watching the cook down the light came on, my Mom used to par boil in water with baking soda to tenderize them I had forgotten all about that, but I like your way of frying them down , was very good. Collards are my favorite. My mom use to fry them and they were so GOOD. I also noticed they would have a sweet taste after the 1st frost would fall on them. (My mom grew a big garden) Thank you for sharing 🙏🏿

I thoroughly wash my hammocks and pressure cook them about 50 minutes (saves time), and add them with its liquid to my seasoned greens. Some greens take longer to tenderize than others so cooking time varies.

You can also use smoked turkey parts and smoked neckbones. Everyone has their own preference.

You don't need a lot of water to cook the greens. I use a forth of a boiler and allow the water inside the greens to finish with the moisture needed to cook the greens quicker.

There is enough broth is you put some of the stalks in the greens, which holds most of the water.

Another thing I think about when cooking greens, is to learn to not necessarily use meat, because I would like to enjoy the natural taste of the greens, by using jalapeno pepper, vinegar, one or two chicken bullion cubes, two tablespoons of sugar to take the bitterness away from the greens, and butter. It magnifies the natural and wonderful taste of the greens themselves.

My 90 y/o aunt taught me to soak my collards in soda bicarbonate for 1 hour rinse then cut and cook. This removes some of the bitterness.

I use Chicken broth instead of water,I fry 4 slices of bacon crispy,pour in my Hamhocks pot with greens,onions, bellpeppers, Lawrys season salt garlic, & okra cut up, cook until done.

It's funny that you use vinegar. My grandparents and my mother put vinegar straight on the greens or something called chow chow. Yummy

People commenting on cooking hocks - you said boil them ten minutes and drain water - and refill with everything but greens boil at least 1 1/2 hours (so how are they not tender - pay attention - good video 😎

I use ribs and cook them until they fall off the bone and then add my greens with salt bada season and jalapeños. And just a pinch of baking soda to take out any bitter taste.

After taking the vein out, cut the leave in half, put the two halves together, roll them up tight like a cigar. Then with a sharp knife cut them 1/8 inch thick. Cook the ham hocks until tender, set aside and let them cool until the grease forms on top of them, remove the grease, then use the ham hock broth to cook the collards in. He also used smoke turkey to.A black foreman that I had showed me how to cook collards. I never liked collards until I ate the ones he cooked.

If you don't overload them with bacon fat, greens are very healthy for you, mustard greens, kale, collard greens, beet greens. My grandmother used to chop up some bacon, fry it and cook her greens in with the bacon and bacon fat.

we eat the stems with the greens.we puy the greens in a pressure cooker along with neck bones and some olive oil and a little suger and 30 minutes later they are ready to eat

I do my green's the same way. Sometimes if I'm out of bacon grease I'll fry some and I leave the bacon in there and sometimes instead of Ham hock's I'll use salt pork. I also use wine vinegar instead of regular. I always use a tad of sugar we pretty much cook them the same except I don't leave as much water in mine I steam them. Usually by the time my ham hocks are nice and tender there's not a lot of water in them. You say a little pepper LoL girl you be pouring it in there I was laughing at that 😂. They look 😋. I'll tell you what I love is collards wrapped in cornmeal and fried they're kinda like an egg roll I'm sure you know what I'm talking about.

I sautéed my onions in a little extra virgin olive oil then I add smoked Turkey wings and for the liquid I add unsalted chicken stock or broth either one works Cook the wings until the meat is falling off the bone Remove the meat then add greens cook till greens are tender add a little crushed red pepper flakes with red sweet pepper Cook for 20 more minutes DONE
