The dehydrator actually seems to reduce the nutritional benefits of your brew, especially dehydrating for twelve 12 hours. Fresh cut leaves in a brewing vessel ( glass seems the best to use to brew olive leaf tea in my opinion ) soaking the leaves in hot water until water saturation of the leaf causing it to drop to the bottom of the brew vessel seem to produce the best brew for me . Thank you for sharing your brewing method, though.

Lotsa ways to dry beside using a $300 dehydrator. Also, freezing is possible. Roasting leaves can add/change the flavor. The typeof water and the volume of leaves used matters.

Do you need any particular variety. I have fruit bearing trees and make tea with fresh leaves.

It should work with any variety, although some commenters have noted the color of the finished tea may vary.

What is the variety of your olive tree cuz I'm wondering what variety should I plant..?is it possible to make tea in any variety?

They are arbequina olives and yes, any olive tree that hasn't been sprayed with pesticides works great!
