I've made these more than once and shared them with a neighbor and she commented , " These are the best I have ever tasted ," and I couldn't agree more . Absolutely delicious .

Pan fried oysters really tastes better than deep fried. I remembered that I had tasted them during a vacation in Taipei, Taiwan.

Fried oysters! I don’t know if I like those more or raw oysters 🦪 with some lemon and tabasco. Lucky for you, those are fresh oysters. Me, I have to get those at Costco. This is a great recipe. That’s my appetizer for my dinner party! Thanks!

Tip: If you fry with clarified butter, it won't burn. You won't need the avocado oil.

Using flour before egg never works because the dry flour repels the egg, leaving spots where the crackers won't stick. Skip the flour and you'll get a better result (plus it's one less step)

gurl - you need to learn the technique of "wet hand, dry hand". it makes life SOOO much easier instead of using both hands for both wet and dry ingredients, and having everything clump up on your fingers!!

This looks amazing! When I was in Taiwan I had a dish that was almost like a cabbage roll but it was pork and possibly rice stuffed into a melon and cooked in a roasting pan. It was the best dish I have ever eaten. If you have any idea how to make that dish, I would be forever grateful.

This is so much oil and in the end there are almost no oil left on the pan meaning the cracker absorbed them all...

I would never blanch them, washing away flavor and oysters are expensive.
