Pickled made from grated unripe papaya popular in the Philippines.This dish is often served as a side dish for fried or grilled foods such as pork barbecue.
Recipe:
Ingredients
500 grams grated papaya
200 grams sugar
300 ml white vinegar
15 grams salt
2 tbsp course salt(mix with grated papaya)
20 grams ginger
5 cloves garlic
50 grams carrots
50 grams red capsicum
60 grams red onion
5 gram black pepper
30 grams raisins

I love achara, esp with pineapple chunks. I remember our family bonding wen we make this side dish. Sister will grate the papaya, grandma will cut the onions and bell peppers, mom will design the carrots. It's just really something special and nostalgic.
