Very good demonstration. You are the first demonstrator of food preparation that I've seen who will try to get out all of the "stuff" in the measuring cup or mixing bowl and not be wasteful. Good job! My recipe for pepper jelly is almost like your recipe, but mine calls for a large onion, too.
I smiled when that sugar was all "lumpy" - I live in Arkansas and like Louisiana adding rice or beans to the salt shaker is an every day trick for the way stuff clumps from the humid air and sugar turning into lumps is a way of life great video - I love pepper jelly
Both hot pepper sauce and vinegars are such a favorite in my home, my mommie make bottles & jars of it every summer with so many different hot & mild peppers (so beautiful when she add all colors together in clear glass bottle & jars) and they taste so great with the fresh peppers. I'm gonna try and get her to make your recipes for your beautiful pepper jellies (I love all peppers, mild, spicy & hot) thanks for your recipe tutorials, I love your channel.
I've added my pepper jelly to bottled bbq sauce to add a little sweet heat to the bbq sauce...heated on the stove and slather on the meat at the end of cooking. it was great.
the tiny red chilies you called basket of fire. I grew some last year they called them super chilies. they are super and fire filled no matter the name. I put them in my pickled peppers last year. during the drought they became hotter than normal. They made more than one garden sampler leave the area in tears.
Next time try loading up a measuring cup then filling the jars seems to speed me up and less messy and faster so you get the lids on faster and still hotter. But a very good teachings, Thanks for the teaching Lady

Pepper Jelly? { Creative! } , Nice Idea's. I love hot peppers in shrimp dishes , Crabs and my fish etc, which I will have to try using some of the Idea when I am out on my Kayaking camping fishing trips as a added thing to my smoked meats, I have looked into using types of Peppers in home brews of beers.

I've never tried. It would probably be a lot less firm with gelatine sense there's not much fruit (peppers) in it to thicken it up like you have with preserves and fruit jellies
My ex sister in law made a real good pepper jelly and her she crab soup was fine ! Too bad my brother had to work in Port Arthur and had to travel. We need more than good food to keep a family together.
You are just so adorable! I love your in-the-wild vids, but don't make jellies nowadays due to the HUGE amount of sugar (too often from GMO beets)--maybe apples would give the sweetness and gel/pectin effect? And have you ever tried spinach (or greens) or tomato/red pepper powder for the coloring? Being somewhat lazy, I just mash peppers into cream cheese--folks can add sugar if they choose! Yeah, it's not jelly...

there ya go again breaking myth's that; making jellies is long and hard to do ... under an hour 6 jars made and soooo easy looking. Great job .. now try and figure out how to make a red and yellow swirl in one jar .. like a candy cane ;)
