How to make 'Perkedel Jagung' (corn fritters)

Perkedel Jagung
Popular as a snack or a side dish in Indonesian cuisine, perkedel jagung (corn fritters) is a simple and savory dish made up of mostly corn and local spices with just enough starch to combine the ingredients making for a light, crispy, and chunky fritter.
Ingredients:
Fritters
2 Tbsp sliced red chili
½ tsp sliced shot chili
2 Tbsp sliced shallots
1 tsp sliced aromatic ginger
1 tsp sliced garlic
1 tsp sliced turmeric
1 tsp sea salt
1 ear sweet corn kernels
1 egg
2 Tbsp rice flour
2 Tbsp corn flour
1 Tbsp chopped coriander leaves
1 tsp chopped kaffir lime leaves
Oil for frying
Colo Colo Sauce:
1 diced red tomato (seeded)
3 diced small green tomatoes
1 Tbsp thinly sliced shallots
1 Tbsp thinly sliced red chilli
1 tsp thinly sliced hot chili
2 finely chopped kaffir lime leaves
4 Tbsp light soy sauce
5 Tbsp kecap manis (sweet soy sauce)
1 kaffir lime (juiced)
How to make:
To make the fritters, first grind the red chilli, hot chilli, shallots, aromatic ginger, garlic, and turmeric in a mortar and pestle to a fine paste.
Add in the sea salt and sweet corn kernels and grind altogether until all the kernels are crushed. Be careful not to over grind as you want there to be chunks of corn in the fritter. Incorporate an egg to the mixture and add the rice flour and corn flour.
Once all mixed together add the coriander leaves and kaffir lime leaves. This will make a loose batter. Heat oil in a pan to medium heat. Carefully spoon the batter in to the pan.
Fry until the bottom is golden brown, then flip the fitters. Once all golden brown, remove the fritter to a paper towel lined plate and let drain. Serve on to a plate and top with colo colo sauce.
To make the colo colo sauce, mix all ingredients in to a bowl, and set aside for all the flavors to combine.
