I’ve only made koofteh once and I added an egg but when I put it in the sauce to cook, it made scrambled eggs in the sauce!!! I was so shocked lol. I don’t know where I went wrong
Thanks for this Henry. Quick question the ones I had up north in Tabriz were more sour and the ones to the south were quite sweet. How do we get that sour variation?
up north, the split peas are slightly different . in that, i mean the split peas are harvested earlier in the south, hence the peas are a dash more sour. i hope i helped you with your enquiries. enjoy the rest of henry,s cooking shows and a very merry xmass to you and your family.. OK?
You’re so good at what you do, Henry. Am I right in thinking you’re in Australia? I’d LOVE to spend a day with you in the kitchen. I’m no chef but I am a very passionate, home cook. I hope you and yours have a lovely Christmas. Thank You for sharing some delicious recipes in 2020.xxx
What are you on about. Iran is a persian country. Even the name of the dish is persian. How can a region in Iran not be persian? We have loads of kofte variations in Iran and this is one of them.
@@jjo6557 you obviously have no knowledge about the history of Iran and it shows. This is very sad to hear, especially if you are from Iran, then you should know. Tabriz is a former part of Azerbaijan. And even the people there speak Azeri. I already visited Tabriz and know many people from there.
@@mx1299 you obviously dont know the history of Iran. Tabriz has never been a part of Azerbaijan, it has always been a part of Iran. There was never a country called Azerbaijan until the 1990:s and Tabriz has nerver been a part of it. Go back 3000 years even and Tabriz was a part of Iran.
@@mx1299 and you obviously are neither from Iran or have studied Iranian history since you think that Tabriz was a part of Azerbaijan. How come they dont eat kofte Tabrizi in Baku if this dish is Azerbaijani? In Tabriz they Also eat ghorme sabzi, sallad Shirazi and ghaliye mahi and still all of these dishes are persian and have nothing to do with Azerbaijan.
