Not all Iranian use tumeric because it will reduce the smoky taste of eggplants instead we use garlic( 4 to 5 chapped garlic will be added to onion and will fried for sometimes)☺
Well i'm from Saudi Arabia and you may know better than me since you are an Iranian the Iranian bread is way better to this dish Anyone from Saudi Arabia should try this food in "Shaya" restaurant it is awesome
