This is unusual, the eggs were a surprise. I think it might make an interesting filling for a veggie wrap.

Tomatoes are not enough. For every medium Aubergine, 2 medium tomatoes. And fresh chapped garlic should be add to onions while frying.

Not all Iranian use tumeric because it will reduce the smoky taste of eggplants instead we use garlic( 4 to 5 chapped garlic will be added to onion and will fried for sometimes)☺

+lalos it stops the flames from flaring up and hitting the skewers or else the meat would burn quickly

Rubbish. Mirza Ghasseme does not have onions. It is heavily cooked with roasted garlic, roasted eggplants, boiled/skinned tomatoes, & lots of eggs.
