🍛 What is Pilau Rice
Pilau rice is probably your rice of choice when visiting your favourite curry house. It’s bold yellow colour (which comes naturally from turmeric, rather than artificial colouring) and rich flavour make it a much more interesting companion to your curry than plain boiled rice. It is thought to originate from Iran or elsewhere in the Middle East, and now you are able to make it yourself at home by following our recipe!
🛒 Ingredients:
2-3 tablespoons of oil
½ a chopped onion
1 ½ tablespoons of salt
Bay leaves
Cumin seeds
Coriander seeds
Black pepper
¼ tablespoon of turmeric
¼ tablespoon of chilli powder
2 cups of water
1 cup of rice
📖 Recipe
1) Add 2-3 tablespoons of oil to your pan.
2) Fry half an onion on medium heat, so that it cooks all the way through.
3) Add 1 ½ tablespoons of salt and stir in.
4) Add a pinch of bay leaves, cumin and black pepper.
5) Add 1 tablespoon of tumeric and 1 tablespoon of chilli powder.
6) Add 2 cups of water and stir until you get a nice colour.
7) Leave the water to boil on full heat.
8) Once the water is boiling, add 1 cup of rice and stir it in.
9) Cover the pan and leave it to boil for 10 minutes.
10) Check on the rice, stir and leave it to boil for another 10 minutes.
11) Turn the heat to low and leave to simmer, covering the pan with foil.
12) After 5 minutes, take the foil off and check whether the rice is cooked. Leave for longer if necessary.
13) Serve up to eat with your favourite curry!

The absorption method of cooking rice. With the rice to water ratio at 1:2, it will take 12 minutes to cook. Get the water to a rolling boil, add the rice, bring back to boil and cover, 2 minutes , then simmer (very low heat with small bubbles) for 10 minutes. Make slight adjustments if necessary. Water can be between 1⅟₄ cup to 2 cups for 1 cup of rice according to how firm you want your rice to be. Watch out for water loss through steam, so do not peek.

@TT-wz6xy
@TT-wz6xy 2 года назад
Yes you wash the rice before adding it , it helps remove the starch and stops it sticking together , you can see it’s damp when he adds it , it’s sticking to the container , if it was dry rice it would have just emptied in easily

Chef Hussain, Salam aleikum. I want to ask if using aluminium pans is safe long term? I ask because I have some famiky and friends who have alzheimers and with that disease ...there is plaque build up in the brain which contains aluminum. There is no scientific link yet but once upon a time there was no scientific link between cancer and asbestos and cancer and smoking. Are there alternatives? I think clay pots are more authentic. Also do you have any more videos of cooking in Pakistan? We enjoyed the one you did very much

Walaikumsallam, I haven't come across this before, as you have mentioned will certainly do some research on this. Since childhood mum has always cooked food in aluminium pots. Auminium metal pots and pans are completely inert and cannot be absorbed into the body. Alumimium pans are completely safe. The foil Chef Hussain used is aluminium and totally safe. To get aluminium into the body it has to be consumed as an alumimium compound as happened in the tragic water treatment incident. Alumimum metal is safe. Use and enjoy. If you don't want to there are copper and cast iron kitchenwares.
