This video shows you how to make pine cone syrup. A simple recipe and an easy way to start your wild picking/wild harvesting adventure. This syrup (or jam) tastes lovely and possibly has some health benefits as well. Pine cones are said to be beneficial for several health complaints: respiratory diseases, agitation, cough, bronchitis, flu and phlegm.

I've seen something similar on Malinowy Nos's channel, but I believe he used young stems instead of cones. You can turn the syrup into wine if you add approximately one part syrup to 6-7 parts water (depends on how much sugar you used) then ferment for a couple weeks and age. Haven't tried it myself yet but I wonder what it tastes like.

I would think that you could use needles or stems as well as the pine cones . I'm trying it today with the pinecones but I might do needles and stems as well separate

I just made THIS yesterday, my pinecones are a bit larger, but I pretty much just like this ... I did cook the pinecones to peices and threw them to the squirrels ! Lol My question is, it's concentrated. But its real bitter ? Do I just pour it back adding more suger / water ? I have a lot of time invested and its a beautiful Amber color ! I did add a bit of honey w/lemon & bee pollen infusion 😁
@solarcyclestvshow
@solarcyclestvshow Год назад
Hey Kathy! Interesting. Maybe it's because your pinecones where bigger🤔. I guess when it's bitter you want to add more of the sweet and sour stuff to get a better balance. So maybe more sugar/honey and lime. Let us know how you fixed the flavour .😉😊

What kind of pinecones? White Pine, Jack pine? Does it matter?
@solarcyclestvshow
@solarcyclestvshow 2 года назад
I believe the pine cones that where used in this video are from scots pine trees. They are most common here in the Netherlands. ;) I'm sadly not a pine tree expert and I've never made anything with the white pine tree pine cones or the jack pine pine cones. I can't tell you for sure if it matters. The taste is probably slightly different... as long as the pine cones aren't toxic you can of course try it. I don't think the species are different to an extend that this recipe wouldn't work...but who knows.

Why did you put the spoon on the jar?
@solarcyclestvshow

A metal spoon conducts the heat well and therefore ensures that the glass will not break when you pour in the hot syrup ;).

Is this the same as pine cone molasses?
@solarcyclestvshow
@solarcyclestvshow 2 года назад
Had to look up what molasses is and found this definition: "Molasses is the dark, sweet, syrupy byproduct made during the extraction of sugars from sugarcane and sugar beets." Since this pine cone syrup is based on the extraction of the pine cone flavour and has all the sugar added to it, it's not similar to molasses in which the sugar is extracted from the natural ingredient itself..😉
