Plea Sach Ko is a refreshing Khmer beef salad ( ភ្លាសាច់គោ ) that uses fermented mudfish called prahok. This salad is loaded with fresh herbs and is packed with all sorts of delightful textures. I am reminded of summer each time I have it.

INGREDIENTS
Lean Beef - 1 lb
Lime Juice - 1/2 cup (used to cure the beef)
Aromatics & Vegetables
Lemongrass - 3 stalks lower portion
Red Onion - 1/4 bulb
Red & Green Bell Pepper - 1/2 pepper
Vietnamese Corriander - 1 large handful
Mint - 1 small handful
Thai Basil - 1 large handful
Beansprouts -1 large handful
Roasted Peanuts - 3/4 cup
Red Chilis (Thai Chilis) - as much as you like
Prahok Sauce - Dressing
Lime Broth - (Collect liquid from Beef after baking + liquid marinated in Lime juice)
Fermented Fish Paste - 1/2 tbsp
Hot Water - 1/2 cup
Garlic - 2 tbsp
Galangal - 1 tbsp
Chicken Soup Mix - 1/2 tbsp
Sugar - 1 tbsp
Fish Sauce - 3 tbsp
