Raffaela you are a true artist with the knife but oh my God that is a large piece of meat which in the US would cost a lot of money. This Italian-American has been making porchetta for many many years. Small family so I use bone-in pork shoulder of course with that slab of fabulous fat. I stuffed herbs much like what you do with garlic and a variety of as yours then I rub olive oil all around it and roasted for 4 hours until it is mouth watering tender. I also make it in my large and heav y baked enamel pot with added hand crushed fresh tomatoes, fresh cut up fennel and similar seasonings. What a great sauce that makes! I cook that for 3 to 4 hours as well. d seasonings

My father was a chef and baker, he was Roman and made porchetta every week at our restaurant in Sydney. He followed the same process and never changed the recipe. It was very popular and absolutely delicious.

The Porchetta King I found a bit macabre in his exuberance, yet very close to my heart. I adore pork, (that's a "rooter to the tooter" Texas thang!) and what he made "era perfetto". Homemade could never compare! Great video!

@vincenzosplate So, I made it for the Christmas dinner and I use a guidence from your clip Vincenzo, here's a very quick review: Seasoning - very well balanced (I use 10g salt per 1kg of meat and it was perfect amount), Coocking time - I use "home version" (3h plus 30min for crust) I had to add extra 30 minutes to the third hour - my porchetta was quite thick with the pork lion, Crust - absolutly amazing - just like Raffaele said about the last 0.5h and 250*C - pure magic, My family applauded me! Thank you so much! I wish I could upload a photos to you guys!

I'm from Brasil and my family is from Italy from the side of my mom, and from my dad side, they've come from Spain. I love italian food! My favorite dish is lasagne. Have you ever come to Brasil?

@@dpt6849 Yes, you are right, many words have changed a bit over time, but many others have remained the same. The director of one of my schools here in Germany (where I teach Italian as an Italian) did not know Italian. But he told me that thanks to the Latin, which he had studied at school, if there was a letter in front of him written in Italian, he could understand almost all of it.

This looks amazing! My fridge is set to 4 degrees C, would that work for the ten day variant? Would like to know what the cooking method is for that variant :D Will have to try the short one first :)

Thanks for your interest! The temperature is too low for the ten-day variant, but it's perfect for the short one. The cooking method is to pour the marinade into a pan and cook on medium heat for 15-20 minutes. Enjoy! 🍝👨‍🍳

Visiting Abruzzo in two weeks...where can I eat Venditti porchetta? It looks like the address listed in Luco dei Marsi is just the butcher shop, not for public service? Do they serve at the Saturday market in Sulmona?

Amazing. Is there a name for the way you break the primal cut down? When I talk to my butcher is there a certain technique name or can I show him your technique on this video? We butcher pigs differently here. More for roasts not so much for curing.
