Welcome to Jeff & Jo's Puerto Rican Kitchen, where we show you how to make easy, authentic Puerto Rican recipes. This is Day 13 of our special COVID-19 quarantine series, where we are putting out a new video, every day for 14 days to keep you company while you practice social distancing to slow the spread of the corona virus. Just because you are at home doesn't mean you need to be bored!
Today we are making pollo guisado--probably one of the most common, if not most popular, dishes in Puerto Rico. This traditional dish consists of slow cooked chicken in a delicious sauce that will make you want to lick the dish clean. So come join us as we are almost wrapping up our quarantine series!

Ingredients:
1 whole chicken, cut into pieces
1 potato, chopped into ½ inch cubes
3 small carrots, slices into ¼ inch
½ c olives
2 tbs oil
½ c sofrito
8 oz tomato sauce
1 tbs adobo
1 tsp oregano
1 tbs anatto oil
Chicken Stock
1 chicken backbone, taken from whole chicken above
1 whole head of garlic
1 carrot
1 bunch recao
1 cubanelle pepper

I made this yesterday (6 Nov 2021), and it came out great. My wife said it was the best thing I ever made. My sister came over today and also liked it. On your list of Ingredients, onions is missing.

I take my cultures food very serious , and even though this is a different way of doing it ,you still used traditional ingredients and it looks amazing. I agree with the sazón packing, not because of the MSG per say but because it isn’t authentic. You can use tomato sauce or achiotte to make color. I enjoyed your video. Thank you

Came out sooo good !! I don’t subscribe to anyone on RU-vid but you guys. My wife is Puerto Rican , and after visiting the island, I have been working on my Puerto Rican cooking skills. Your channel is great! Next is arepa de coco with bacalao inside. Had it at a beach near Pinones , been on my mind since !

The back and vegetables you used to make broth I would find a use for and not throw away. That back had meat. Especially a pet will eat those vegetables. I’d grind them and make stuffing with it.

You have to take the skin off 🥺🤨

You can certainly choose to take off the skin but traditionally this chicken is made with the skin on.
