How to Make Roast Pork Loin on a Charcoal Rotisserie With Crispy Pork Crackling

In this video i'm going to show you how to make roast pork with perfect crackling on a charcoal rotisserie!

If you like that perfect, bubbly and easy to bite through crackling, then this video is for you! I'll be sharing my tips to get that perfect pork crackling.
When using a rotisserie, I like to start with high heat to build that crackling first, that way you won't have to deal with big flare ups later in the cook once the fat starts to render down and drip on the charcoal.
I like to use cuts like leg and loin for a rotisserie, shoulders have a bit too much fat for my liking as a roast, I prefer to use a shoulder for pulled pork.
You could use this method for a pork belly, i'd just recommend taking it to a higher internal temperature of around 85c/185F to let the fat render down more as pork bellies are fattier.
If you're following along using a leg or loin, then remove it at an internal temperature of 64c/145F, if you overcook a leg or loin then you'll run the risk of them drying out.
It's hard to beat a roast pork done on the rotisserie over charcoal, definitely give this roast pork method a try for yourself!

I do two dozen pork legs at work every week. I find that one day uncovered is enough to dry it out in the coolroom, provided you pat it dry thoroughly and the place in the coolroom is undisturbed. Some pork legs are factory brined, and they are easy to crackle up if they are a decent commercial foodservice grade brand like KR. Proper fresh butcher pork is even easier, the skin is already firm and it doesnt arrive in a wet bag. Ha! same temps I pull it as well, 64 degrees and it coasts up past 70 for lunch service.

I bought the same thermometer and it stopped working due to temp beeing too high when used in the Weber with a roast. Seems ambient temp above 500c and it gives a warning and stops working? Have you had a similar issue?
