The famously known Royal Vigan Bibingka is a unique variation of Filipino rice cake made of glutinous rice flour with a very soft, chewy, dense and mildly sweetened. Mixed with a melted butter or the local margarine, you can either opt with cheese toppings or just a plain top. This delicacy is usually found in the Northern part of the Philippines where Vigan, known for its UNESCO world heritage is located.
The usual basic ingredients are glutinous rice flour, coconut cream, sugar, milk, butter/margarine, eggs and cheese. In this version, I added young coconut meat/coconut or locally known as ‘macapuno’ but you can skip this if its not available in your area. Just increase the sugar to 150g as coconut macapuno added some sweetness. It will still definitely taste delicious.
This is an easy rice cake to put together and bakes quickly for an enjoyable midday snack or breakfast and brunch favorite. It is traditionally served especially on holidays but you can always enjoy it any time of the year!

380g condensed milk
100g granulated sugar
400g coconut cream
200g evaporated milk
340g coconut macapuno
6 large egg yolks
120g melted unsalted butter/margarine
1 tsp salt
1 tsp vanilla extract
