The essence of Sambal Chicken recipe relies on the sambal paste itself. Whether you like it sweeter, spicier or in a thick gravy that you can pour over a hot plate of rice, the preference cannot be contested. Here's a recipe that is served in my home whenever we have Eid or Eid Adha festive celebrations.
/INGREDIENTS
CHICKEN PREP MARINATE
1 kg Chicken
1 tsp Salt
2 tsp Turmeric Powder
Oil to Deep Fry
SAMBAL PASTE
2 inch Ginger
6 Garlic
2 Onions
6 Shallots
15 -20 Dried Chillies (De-seed and blanch)
1 stalk Lemongrass
Curry Leaves
Pandan Leaves
1/2 a cup of Tamarind Paste
2 tbsp Palm Sugar
Salt to taste
Garnish with coriander or spring onion
