São Jorge is a Portuguese cheese produced in the Azores, on the island of São Jorge. It has an indication of the geographical origin of agricultural products in the European Union.
For production I used:
-15l of milk pasteurized at 65*C for 30 minutes
-3g calcium chloride
-Meso-thermo cultures according to manufacturer dosage
-3ml calf rennet 1:17000
