If you've ever heard the word "schmaltz" before, you likely know someone who's Jewish. It's a Yiddish word that actually means "excessive sentimentality in art or music," which can be applied here but the word is more commonly known in the kitchen as "rendered chicken fat," or, more simply, chicken grease. Similar to bacon grease, it solidifies when stored in the fridge and melts once heated. It is a very flavorful fat to use in place of vegetable or canola oil and even butter with a medium-high smoke point, but it's more traditionally used in Jewish dishes such as matzo balls, chicken soup, and kasha varnishkes (bow ties with buckwheat). It only takes two ingredients to make this Jewish delight, making schmaltz easier than learning how to waltz!

The leftover skin is called gribenitz or gribenes (depending on where you are from). To me the schmaltz is the byproduct. The gribenitz is the real prize.

I’m Cajun French it’s similiar “gremise” something like that. It also means “eye boogers” lol because it’s little crusty bits

I always knew there was a use for what I was scraping away from my poultry stock all these years, and I knew it was Jewish, but I didn't know _what._ So I really and truly *thank you* for this. Just made a batch from my home raised chicken, the fat of free ranged birds is bright yellow so it ends up being this beautiful buttery smooth. I second render the fat skimmed from a whole bird done in the pressure cooker to make bone broth. Even the little fat left as skim on the beautiful broth makes a brilliant pan starter. Don’t start me on my Safta’s chicken soup. Yuuuum. Great reel.

I combined this with Sam The Cooking Guy's hard to find recipie for grilling chicken in a cast iron pan. I made it with a bunch of spices and damn. Can't eat that everyday, but it's really good. Sam is Canadian Jewish . I definately reseved the chicken oil and mexican spices for the mashed potatoes.

As I understand it schmaltz is used as a butter replacement.🤔. But I could be wrong. I am not Jewish but I remember reading something about kosher not using milk and meat together.

What about using chicken fat also? Or does that make it something else all together? I microwave my leftover chicken skins to make a crispy snack. Commercially packed skins are so expensive!

The fat can definitely be used. I trim a lot of fat off of whole turkeys before I roast them and it makes wonderful schmaltz. Plus, I find the fat makes more schmaltz than the skin, although you get less gribbenes to snack on at the end.

Crumble up those crispy skins and use instead of bacon bits. Good, healthy fat. Much better than those science project seed oils. I crisp my chicken skins in the air fryer.

Hi, I'm curious what is so bad about seed oils? I keep hearing about it but not sure if it's newspapers reporting bad or salacious science (like how eggs were too high in cholesterol 10 years ago or butter was bad).

@@p_roduct9211seed oils are very high in oxidising agents which are pro inflammatory and high in omega 6. Very ageing and unhealthy for the vascular system. Canola is the worst.
