How to make Shoyu Ramen 醬油ラーメン [Simple Recipe Great for Beginners]

Hello! This time I made a different recipe of Shoyu Ramen, which is simple and also great for beginners. There are less ingredients used, yet retains the main taste elements of ramen.
The soup base is made from katsuobushi, with no pork or chicken used. This creates a light taste while still giving a deep umami taste. Instead of adding the ramen tare (sauce) separately, it is boiled together with the soup to blend the flavours before serving. Noodles are thin, silky and flat for a smooth match to this ramen broth. This time I made chashu using rolled pork shoulder loin which is tender and savoury.
As always, I did not use any MSG because I try to use various alternative ingredients to bring out the umami in my own recipes.

Incredible as always, thank you ! Interesting to use only dashi for soup and not use chicken, pork or beef. I love clams soup ramen, and here at Paris, a japanese chef made during one week, a mussel soup (murugai) and french traditionnal smoked sausage called "Saucisse de Morteau" and instead of water, it was a junmai daiginjo ! Of course all alcohol was evaporated. It was strong flavour but really interesting ! I have a question : it is possible to use grilled fish as chashu ? A french-japanese fusion restaurant use shime saba as chashu but this is really a bad idea i think... Thank you for your work !

I love eating ramen, I guess I'm definitely the type you could call a ramen addict🤤🍜 unfortunately here in Germany where I live I either gotta drive at least 1 hour to eat some good bowl or I'll make them myself which always consumes a lot of time😄 Anyway awesome video, inspires me to make some ramen as soon as I can spare the time for it😁 my only question.. Where did you get your noodle maker, it isn't the ordinary stainless type which you've linked in Amazon and you mostly get nowadays😅 I like the wooden rolls and the tradional look of yours😃 Keep it up, and have a good one! Itadakimaaaaas🙏🏼

I just ate toripaitan ramen (seirock-ya ramen in indonesia), and it was so good, made me remember about halal ramen in tokyo and Kyoto (ayam-ya ramen). And now i really want to try your toripaitan lol

Looks great! The shoyu types that you use, how are they different from Kikkoman?

normal Kikkoman is a koikuchi shoyu. usukuchi shoyu is light soya sauce :)

Could even use palm sugar or molasses if you wanted to, I think it's just to get that rich sweetness

I could never pick a favourite style. I love all types of Ramen. The best bowl I have had however was the spicy miso at Kikanbo in Tokyo. Lately at home I really enjoy making double soups with chintan and dashi, then finishing with chicken oil and shio tare. This recipe looks good. Sometimes less is more.

I have tried it, but I replaced apple vinegar with white vinegar and there was no Okinawa black sugar, so I used regular palm sugar. It was too sour for my taste. If I want to have a hint of citrus that the vinegar give, how much vinegar should I get (in ml) if I used your recipe?

hi thank you try my recipe! The katsuobushi contain acidity, so if the soup is too sour for you, make the ramen sauce without the vinegar :)

as a person who doesnt live in japan does any flour works for making noodles? also how long is the noodles size for when you cut them? thanks for your videos :D

thank you for watching! Use a one-to-one mixture of all purpose and bread flours. The length of the noodle is about 30cm to 40cm :)
