Hello, in this video I will show you how to make traditional Japanese Shoyu Ramen from scratch using all-natural ingredients, with no MSG added.
Shoyu Ramen is the most common type of Ramen in Japan, the soup is a clear, brown broth based on chicken and vegetables (and sometimes other ingredients) stock flavored with soy sauce (shoyu) to result in tangy, salty and savoury, yet light taste.
In my recipe, the taste of the chintan soup is clear and light, while packing great taste and umami. The total preparation time for this ramen is about 2 days for making dashi and also to make marinated eggs (ajitama).

Istant ramen is the DEVIL!!! Cook some ramen and put it into the freezer next time. So you can just pop in into the microwave and put some noodles into it. Ramen light, but tastes million times better.

I made my first all in ramen yesterday and it came out so good SHE is glad there was broth left over. For my next batch I only have to make the Soy Bacon Tare. I found the recipe instructions confusing, (a little) but weathered the confusion by sipping on a small glass of 15.7% ABV sake. Having watched this video, and making notes, this is going to be my next Ramen effort. I’ll make it to celebrate my 89th birthday in September.

I just saw this tutorial and impressed me enough that I subscribed. I will retire between now and 5 years and like to cook. Right now I have a thing for trying different ramen restaurants here in Los Angeles. When I retire I hope to spend a little more time in the kitchen making what I like. I also would like to travel to Asia and especially Japan.

There are even more levels. Like : Level 10: Go to the beach, pick some kelp in the springtime, dry it in the attic so in the autumn, you have your own kombu.... Level 50: Buy a little pig/chicken....feed it with home grown wheat grass + corn... Level99: Preparing your home made shoyu sauce start with.... Good luck!

Worked at a ramen shop where we cooked our soup for 12 hours and made fresh noodles every morning. Definitely grew a new appreciation and love for ramen as well.

I didn't realised the long process of cooking method of this ramen recipe ,so many step to implied before you can achieved the satisfying good taste of the palate soup. So yummy and no Msg all cooked naturally by using the right ingredients to complement the balance taste.

i watched the whole thing in amazement..then realizing its too complicated for me..so i just grab my instant noodles and will just plan on eating this in resto..once pandemic is over :)

It is a work of art but I found a nice middle ground of a simple tare, stock cube simmered with some veg offcuts, sesame oil or scallion oil + what ever meats you want to add. It definitely doesn't compare to this but it's still really nice

Thankfully - a decent ramen shop opened less than an hour away from where I live. There's no way I could ever make this at home, but I'd love to try this!

Wow! I have always appreciated the ramen I get (tonkatsu) from favorite Japanese restaurant but now having seen how many steps it takes, I have a deeper appreciation! I will continue to buy it! LOL

Growing up in japan from the 60’s and 70’s. Tonkotsu ramen did not exist. It was shoyu, shio and miso so I enjoy the classic ramen

great video! really enjoyed watching in detail how to make a bowl of ramen. on a side note, i was able to build an exact replica of the pyramids during this video. so next time i want a bowl of ramen i'll take a week off work, start prepping 3-4 days before my planned dinner, allez cuisine!

In chinatown i go to the best ramen joint in north america ...lol and they are 🔥🔥🔥🔥🔥🔥. They have 2 locations one in my hometown and the other in Japan. Just the broth alone takes 3 days to make and when you taste it you'll understand. There is a sense of pride the way they carry themselves, they know about their product from server to cook. Its hard to describe it but you just know when you walked in and every employee out loud greets you in japanese that you are in for a great food experience. Wear the loose pants coz you gonna have to loosen your belt 1 - 2 notches... This vid reminded me that its been a long time since i visited them..... as in 1 week ago 😊

This is not a dish most japanese people cook at home, You go to a ramen shop where they make this in large quantities. Yes this is a dish that takes days to make, but if thats your job I don't think it's more work than making hamburgest all day long, at least not if you aim for really good hamburgers.

Amazing cooking! Some questions / comments: 1. Your ramen broth is 100% chicken. Wouldn't you use some pork (I mean mixed meat)? Or that would be another soup? 2. You never use lids. Especially when cooking the chicken. Please use lids, as this way you consume too much energy. Boiling up the planet / global warming / cost of living.... 3. Why did you add water when preparing lard from pork fat? I never do that. Cut fat into small cubes and start roasting at medium/low temperature. The water just evaporates, does not add any flavour or texture. Waste of time and money. 4. Wouldn't you serve the boiled egg cut into half? To show the nice texture of yolk? It is so hard to eat it like this. Need to squeeze with chopsticks, and then the yolk may squirt out covering all the peope in proximity in yellow goo.... 5. Some people add the soy sauce into the broth at cooking some add just at/before serving. What is your oppinion about this? Great vid!!!

Hello, thanks for watching my video :) To answer your questions: 1. Yes you can use other meat too! Pork with chicken can create deeper more umami taste. I used only chicken which is an old traditional method for Shoyu Ramen soup. 2. Normally we do not cover the soup so that the meat smell will evaporate away from the soup. Covering may retain that back into the soup. Also covering this soup may over-boil resulting in cloudy soup. 3. Adding water actually prevents the pork lard from being burnt. 4. Normally I do not half my Ajitama so the yoke will not flow into soup when tasting. I will take note your suggestion to show Ajitama next time :) 5. I will not usually put soy sauce into broth before serving ramen as this may affect taste. It is okay to add some salt to make soup more salty but not really my style. Hope that answers! You are very advanced ramen specialist!

>no MSG >ton of soysauce I don't mind it actually, but I prefer if people should understand that MSG isn't a big deal especially soysauce, fish and meat contain load of glutamate and sodium that will trigger your headache - if your sensitivity to MSG is even real (actually it isn't)
