To avoid making mushy rice you add cold rice is the best tip! I love fried rice and tried making it at home but it always comes out mushy and I am disappointed. I'm so glad i found your channel. Thanks for sharing! :)
WndrWmn72 A to avoid get mushy rice the only reason you get mushy rice is because you boil it to much if you wanna get the rice exactly like a chinese restaurant’s one you have to half boil the rice the rice must be vook but half boiled and dry fully cooked rice frozen or not is very bad research it you will see
This recipe was great but I added garlic and instead of yellow onions I substitute it with green onion. As for the sauces, I added extra ingredients like oyster sauce and teriyaki sauce just to give it more of a kick and some sweetness. Also, added in a little bit more sugar to my liking. Came out great! Will be making this in bigger trays for events.

Youve mastered fried rice when you know to use oyster sauce and fish sauce to contribute to the flavor(as well as some sort of stock such as an asian chicken powder). A little rice cooking wine doesnt hurt while frying your veggies and meat. Also, its good to dump out your other ingredients before frying and flavoring the rice by itself at a higher heat with constant movement(taking it off the heat and stirring some more before you pause to add something else). Lastly, sesame oil should come last as it is very much a flavoring oil(not a cooking oil) and heat works against it doing its job. Cooking with peanut oil makes almost anything better but its pretty expensive. Chopped green onions go nice with this too. You are a super elite when you know to have some chinese spicy chili oil to add in when serving(it usually contains some sesame oil in it too so again, flavor galore). Keep these ingredients stocked and you are a master. A tiny bit of msg dont hurt neither(very small amount of umami flavor never hurt anyone).

I'm Vietnamese and this is exactly how I cook my fried rice! I like to make a hole in the middle and fry the egg there then stir everything together :)

I made it yesterday. I used jasmine rice and as stated cooked it the day before so was nice and cold. Jasmine rice has an amazing sense and unique flavor to it. I added some oyster sauce but aside of that, stayed with the exact same recipe. It came out absolutely amazing. Just as good if not better than our local Chinese restaurant in town makes it. So easy and looks so tasty, I'm thinking about substituting 1/2 lb. of cooked chicken for the shrimp. Not that I don't like shrimp but Chicken fried rice is my favorite. Thanks for the tip about the chilled rice, thinking that's why my rice never turned out right. I used it either hot or warm. I tried it w o the mushroom sauce and it still came out delicious ❤ I cudnt believe it tasted just like I got it from the chinese restaurant I even texted a pic of my dish to my friends and they didnt believe I made it they said I bought it from a restaurant and I'm bluffing 😂
Followed this recipe using chicken with the shrimp, Chinese stir fry oil with sunflower oil and normal dark soy sauce, and it was a hit!! My mum had thirds. It was really delicious 🤤😆 thank you!

I always wondered why I was screwing up my fried rice. I never knew I had to use chilled rice. I just go straight to frying after I cooked it. Yeah, sorry!
Yummers!! I'll make the veggie version this week end. Your video on cooked rice has been a lifesaver...I've made it many times without fail. BTW, I love your skillet! All-clad is the best! I never would have been able to have any, but I found 3 (!) at Goodwill last year that were brand new. I got a skillet, a 2qt saucepan, and a 1qt saucepan for under $10.00 for all!

Made my first pan using tjis video. It was perfect. I didn't have peanut oil so I grated walnuts and added to the oil, no mushroom flavor so I used Jamaican browning and it was delicious 😋 thank you great video.

Never made shrimp fried rice before... nailed it with this recipe. It's SO easy and awesomely delicious. My family prefers this fried rice recipe to any Asian take out in the area.
