just some help full tips. weather doing deer or moose, the best mix is 50% pork un-trimed butts or shoulders and 50% deer or moose. it needs that much. after mixing in your spices you need to add a little water, set it in the fridge for 24 hours or more so your spices go thought the meat and do its job,, when you open the fridge after 24 hours, you will have this amazing great smell. as for the casings weather its real pig gutts or the artificial ones, they need to sock in a lite salt water a few hours before use. after you stuff the casings. at every 6 to 8 inchs squeeze the meat a part a bit, and twist the casing 5 or 6 time, and repeat down the casing. when smoking, hang them in the smoker, dont lay them flat on a grill. smoke for minimum of 4 hours no hotter then 125 to 130 this is a must in order to get that smoke threw an threw.. the thicker the meat the much longer.. .. then finish off to internal temp at 165 to 170 F.. i use my own mix of spices and lots of fresh garlic.. not the powder junk

i hope you dont rely on the C vac being tested if you say that, as labs will eat any meat and want more. even when you cant eat it.. my beloved rip black lab would eat any meat including fish , cooked or raw. breeder feed the moms raw chicken legs.. to have healthy pups..

We make our own sausages also. One tip...after mixing and seasoning we always leave it set in the fridge for 24 hours to let the seasonings blend through the meat better. After the 24 hours then we vacuum pack and freeze.

We’ve got the same kitchen aid meat grinder. We use it to to mix 80/20 venison to pork fat as well with our grind meat off the deer. Works awesome and makes the best burgers

Smoked meat sounds so good right now! Have a great week. Something to think about is when stuffing the casing, every 5 or 6 inches give the casing a twist to set the length of the sausage links! It will also help with storing the links.

My father used to cube deer meat & can it. It made a great quick meal. I think DeJay would like it. He'd simply open up a jar and heat it in a pan & make a gravy right in the pan with it, then he'd serve it over egg noodles! It was very yummy! It was also good right out of the jar and in fact, he would take a jar with him on his hunting trips & eat it for a snack, while stuck up in his tree stand for hours! We used to do all that with a hand crank grinder that was attached to a counter top and never thought twice about it. Good eats!!!

My brother has a fish market and he makes fish jerky and sausage.. it is AMAZING.. smoke thin fillers of anything, but our favorite was catfish, until its jerky!! Don't forget the brown sugar while smoking!! And the sausage he used male carp, brine them over night, grind them, add seasoning, stuff and smoke!!

Good video!!! When my dad and his family made sausage in the old days, they would fry up a sample of the product , to see how it tasted, before stuffing the casings, so there were no surprises when tasting the whole batch for the first time. That way they could adjust the spices to taste.

My Dad used to make his own sausage and ground the meat by hand with an old fashioned meat grinder. He also made the best dried beef I ever had!! You guys did an awesome job for your first try! Look like it was a hit with everyone in the house.

I have been wondering if the kids help with prepping the deer meat and now I know. Emma Lee was a good helper on the stuffing. I have also been watching the bearded butchers and enjoy them alot.

I can remember watching my Grandparents make sausage. They used a hand grinder and my Grandpa would break a bottle leaving the neck and a little bit of shoulder, grind down the sharp edges and place the casing (yes, pig intestines) over the neck and stuff from the other end. Good memories.

We have a 170 acre farm in Southern Illinois. We don’t live on the farm, but rent out the farm land and play on the rest. So fishing and hunting are big hobbies for my family. My husband, son, grandsons and granddaughters all fish and hunt. I prefer beef to deer, but do like my families deer sausage. The grandkids ages are 8 - 19 years. So every year between the deer meat they hunt and a few close friends (those they trust their meat is well cleaned and good) make brats, summer sausage, smoked sausage and little smokies. It is two days of man bonding! My husband and son have the place and equipment. They usually end up with about 1,000 - 1,200# of meat. They do a 60/40 mix. 60% pork, 40% deer. You might want to add about 1/2 cup cold water or apple juice to your sausage mix to help distribute seasonings through the meat when mixing. They only grind twice. However, they weigh out the pork and deer then grind together course. Mix in spices (they have a secret recipe past down from my grandfather) with a gallon of liquid per 100# of meat and grind on finer blade. Then mix in cheese or ground apple, mushrooms and Swiss cheese or Monterey cheese and finely chopped or ground jalapeño pepper... We now have an electric mixer. It mixes up to 150 lbs of meat, but used to hand mix, grind and stuff. Should not over grind. We cold smoke our meat. Then portion, vacuum seal and freeze. Summer sausage and smokies are hung to air dry in cool well ventilated area for about 6 weeks. Try adding some liquid when mixing in your spices. Your sausage looked very tasty!

When your stuffing the casing when you get to a 5 inch sausage give it a few twists. Then continue with the next sausage, makes it stay juicy while your cooking it. Hi to all and Be safe.

So glad that the seasoning came out to your liking ! If you ever decide to change up the seasonings, I'll tell you what we've done to prevent spoiling a whole batch of sausage. Once you get have seasoned your meat. Make a small sausage patty and fried up and taste it and correct the seasonings as needed before putting them in your casings. First batch of deer sausage we made was too bland because we didn't taste it before filling the casings. We also would go to The butchers and purchase large quantities of bacon ends (smoked if they had them)10 lb and 20 lb boxes to have on hand to use for our deer sausage and hamburgers. Makes the best burgers and sausage in my opinion. The boys are growing up so fast getting to be young men. It's nice to see Jacoby on again. So glad everybody is healthy and happy. We used cotton string to tie our ends, plus we didn't make the lengths so long. If you are ending one piece and starting another tie off one end and give it a twist and then tie the new end and the cut in the middle.

Ive never made it that way , very interesting! Ive just mixed pork fat and sausage season, for breakfast, i like it as well as straight pork sausage, my buddy mixed beef fat with beaver , made a good burger , he was the trapper , i was the deer hunter . But we gave each other what we fixed up

Use to love every deer season cuz my Dad an his Buddies would get together an make everyone smoke meats, sausages an everything else you could think of. An that's what we'd have till next season. I love this video. On thing I like to make is summer sausage. Last year I mixed my venison with breakfast sausage (hot and mild). With the hot , I added brown sugar, for some sweet and spicy, for the mild I added dry ranch seasoning, both tasted amazing. Also search dear backstrap cream cheese swiss roll, another tasty treat!

If you put the mixer in the sink it is a lot closer to the counter. Also you should use the mixer with the paddle and immulsify ice water into the mixture. That will give you a smooth product. Great job by the way.

This brings back great memories of my father whom I helped make smoked sausages years ago. What I remember him doing is stuffing and then twisting at the length he wanted the sausages to be and then continuing to stuff the casing. I also think he soaked his casings ahead of time. We also had an old smoke house that he hung meat in to smoke. I also remember him having to work very fast at it. Like the meat mixture would come very quickly. I remember lots of laughing going on. We really like the leggs blend #10 sausage seasoning if you want some ideas you can order it but our local country store used to carry it but had to order off amazon last time

My KitchenAid worked great. Made about 50lbs of deer sausage of different varieties. Next purchase is a mixer. My hands freeze every time. Lol.
