There's lots of different cuts you can use to make pulled beef, in this video i'm going to show you how to make smoked pulled beef using a bolar roast!
Normally when i'm making pulled beef, i'd favour cuts like brisket, chuck, cheeks, oyster blade and beef rib. Bolar blade roasts are about as lean as i'd go for pulled beef, anything leaner like silverside or topside and you're going to be left with potentially tough and dry meat.
When treated right, bolar blade can produce some tasty, tender and juicy pulled beef just like in this video!
I'll be covering off the below in this video:
- Smoker set up
- Bolar blade roast preparation
- Cooking times and temperatures
- Cooking method
And much more!

This bolar blade roast was around 2kg, I trimmed it, seasoned it in my beef bounce bbq rub, smoked it for around 3 hours at 120c/250F until I was happy with the bark (internal temperature was around 160F/71c at that stage), then I placed it in a foil tray with some onion, carrots, celery, garlic and beef stock.
I wrapped the tray in foil and finished the bolar blade roast off in the oven, still at 120c/250F until it was probing tender at around the 205F/96c internal mark which took around 3 more hours to get there.
So around a 6.5 hour cook in total! Then I let the bolar blade roast rest for around 30 minutes before pulling it apart.
This bolar blade roast made some really nice pulled beef, so if you've got a bolar blade roast at home, definitely give this a shot!
