Made these last night and they were mind-blowing, thank you! I've struggled for years to get the right chew and consistency and I think we've hit the sweet spot here. The cream cheese works! The only variation I made was leaving them in the oven for an extra 3-4 minutes. They didn't look quite cooked enough for me at 9 mins. (I chilled the dough overnight, and then again for 30mins after forming the 'cookie towers'.) I also added 72% dark-chocolate chunks and morsels instead of semi-sweet. I brought them to work and they are now dust in the wind. Yumsational. As a side note: make sure to weigh your flour in grams if you can. flour measurements are tricky without a scale.
+MegaStargirl22 Yep, exactly. All sugar is hygroscopic, meaning it attracts and holds moisture, but certain sugars (molasses, honey, brown sugar) are more hygroscopic :)

Hello there ,I have a quick question I was wondering whenever you were to lower the temp for 325 would you also keep the same time for 9 minutes or would you go a little bit higher like around 10 or 11 minutes for the cookies ? . whenever i made cookies in every type of recipe exist, my cookies doesnt spread as it should be, even the dough i made still sticky.. so i have to spread itself with my hand, but still not satisfied me with the result .. the taste is delicious, but it look not so flattering .. do know what is the problem ? or mybe my oven is the real problem? 😀😀😀
