In my family Rachel we call that a ,"Gizo." And can be made with beef chicken or pork same cooking concept , but nice to see it on RU-vid ! Gizo from the word Gizar my mother used to say , "Gizo ya sta listo ven a Comer y Caliente tortilla! !She passed in 2019 but every time I cook a Gizo she's in the kitchen with me.. Thank you .
Oh Rachel, my grandmother used to make this for my brother and I growing up in Rome, NY. It was SO good! I doubt I can make it nearly as good as she but everything I've tried of yours has been outstanding and my son loves it just as much as I did. I'm a relatively new follower of your recipes, and I am seeing something that I didn't initially. It's the tiny details of your cooking that are the real magic! It would never have occurred to me to toast something like the shells, or the rice in some recipes, and many other small things you do, like holding your garlic back a couple of minutes while you "sweat" your onions and similar things. I've always heard the old saying, "The devil is in the details" - but in your case, it's GOTTA be a little bit of heaven instead ;-) Thank you for sharing and EMPHASIZING those small things so that those of us who grew up with moms who mostly cooked simply for edibility and not so much "finesse" (for lack of a better word) can learn and pass it on to OUR children and grandchildren. That's not to denigrate my mom, but to simply acknowledge that her priorities often had to be elsewhere... the world is not always kind. I bless her memory always, and I bless you for sharing your unique gifts with us all. Be well! 💜💙❤💚

Hi Rachel, I remove the grease from the pan by folding a paper towel into a small square and then I pick up the paper towel with my tongs, then I soak up the grease with the paper towel. I’m sure you know how to do this but there might be someone watching who doesn’t know this trick. Thank you for sharing your gorgeous recipes.🥰
