New York-style pizza is pizza made with a characteristically large hand-tossed thin crust, often sold in wide slices to go. The crust is thick and crisp only along its edge, yet soft, thin, and pliable enough beneath its toppings to be folded in half to eat.Traditional toppings are simply tomato sauce and shredded mozzarella cheese.

I noticed you do 60% hydration. I'm guessing because you need to figure the water in the sourdough starter, so 62% in this video? I like to use my sourdough starter so I followed your regular margherita dough recipe. I think I made the best pizza ever! Thank you for teaching me to take my pizza to the next level.

I do at room temperature. But depending of country temperature if its really hot keep refrigerated

Looks fantastic!! Always LOVE NY style and I only bake sourdough bread. Thank you! I only have an electric oven. How many minutes do I bake the pizza in? I know you may not have the perfect answer, for you are a professional using a "real" OVEN (you probably don't use electric oven). But I thought I would still check. Thanks

I do use all types of oven s wood fire. Gad and electric. Cooking pizzas in wood fire oven it's about 60/ 90 seconds. Gas oven 80/ 120 seconds. Electric pizzas oven around 2/ 3 minutes

Hi Massimo. I'd like to add more flavor or a nice kick of something to my pizza gamberetti, so far I only add Mozzarella and prawns but tastes a bit plain. I'll appreciate any suggestions please. All the best 👍

I've tried this dough twice. It looks great when it's done initially. 24 hours later when I try to stretch it it has pieces of broken crust throughout primarily on the bottom as I begin to stretch it. I left it on the counter with a bowl over it. What's going on? Thanks
