I feel so sad every time you have to apologise for every new dish that is not traditional. Cuisine evolves. You teach us how to make easy, delicious food with what we have at hand. So what if it runs off from being an old copy. There’s TONS OTHER videos making traditional food as well. Just keep your creativity and continue to inspire us to eat good food.

Thank you for this. His one pot pasta video had such hateful comments. It made me so sad.

It may be nontraditional for Italians, but this is a very common recipe in Japan. No one there will be upset. They've been eating it for decades.

The fact that “creators” are being heavily reduced to mere “tradition butcher” is such a shame. Let this guy work. He is so positive and great. I am asian and not offended at all.

I'm Asian and not offended by this video :) There's nothing wrong with using soy sauce to season a dish. That's how it's meant to be used. In fact, I'd suggest trying fish sauce in this dish too - mushrooms and fish sauce are a great combination. And before some people say it's weird, just know that a version of fermented fish sauce was used by the Romans too. There seems to be a perception that people would be offended if dishes or ingredients of their cuisine were cooked differently than the original recipes. While I'm sure there are some people who get too easily offended, I have seen many recipes (not this one, but many others on the web) that are just so silly that it's only understandable people would react angrily to them. For example in one recipe Gordon Ramsay calls rice noodles glass noodles - as ignorant as calling tagliatelle spaghetti. Many times supposed chefs put up recipes of pho but then just make some random noodle soup - you can't make carbonara and sell it as Bolognese just because it has pasta and sauce. I can go on and on listing these... I'm not saying you cannot experiment in cooking, but when you're a professional chef I would expect you do the research before playing with ingredients. Even Picasso did his fair share of learning the proper techniques before experimenting with abstract forms. If you experiment without knowing the basics, and you do things differently than the way they were designed to be done without acknowledging it, then it's not intentional experimentation, but ignorance. I just wanted to clarify what I feel is a misconception about "offended people in the comments section" and also talk about a repeated pattern of ignorance in many popular cooking shows (not this particular video). While there sure are many over-sensitive people out there, there are also people who I think get understandably annoyed when the dishes they know well and love get misrepresented. Creative spin (intentional deviation from the conventional methods to create something new - is great, but cannot be done without actually knowing what those conventional methods are in the first place) and misrepresentation and misuse of common ingredients (yes, these ingredients are likely common to some people in some parts of the world) are vastly different. Anyway, I really enjoy Donal's recipes - that's why I'm subscribed - and this one really made me crave some mushroom pasta now.

I don’t understand “purists” when it comes to food. There’s nothing wrong with modifying certain dishes. Food is a part of people and just like people, everytime it goes somewhere new, it adapts. Pasta is what Italians interpret from Chinese noodles. A lot of American dishes are product of immigrants dishes from all over the world and they’re constantly changing. I don’t see this any different than Koreans putting melty cheese and spam to their ramen and now it has become a staple comfort food in Korea itself. A lot of Japanese dishes combine soy sauce and butter as well. With the addition of mushrooms, I’d say this looks not only appetizing but also comforting. It’s actually a good combination of flavor and worth trying.

Late to the party, but I wanted something I’ve never tried before. Honestly was skeptical using soy sauce in a pasta dish. When I put the soy sauce in the pan, I squeaked a little, thinking it was a horrible mistake. I took that first bite with cautious optimism, as how can Donal steer us wrong, right? I’m so glad I tried it - it was delicious!! I’m rubbing my pasta belly with love.

We Indians need our spices and chillies...so after "adapting" Chinese cuisine to our taste, we've now tampered with Italian dishes. Most restaurants now offer Chettinad pizza, using sesame oil instead of olive oil and curry pasta, spicy with Indian masalas...food is meant to evolve. To be fair, there's also pasta dosa and noodle dosa, bastardized versions of our beloved dosa. The most popular masala dosa was picked by Oprah in the top 10 foods to try before you die line-up. So there! Love your videos, keep going!

This is the part of Japanese cuisine that hardly gets mentioned: Yōshoku, or “western cuisine”, which is a Japanese twist on western dishes. This includes pasta dishes with Japanese ingredients, or their own take on steaks, curries, and croquettes. I would replace half the garlic with some sliced leeks for some more depth of flavor, but it’s good to see Donal embracing fusion cuisines and making cooking more accessible!
