Hey Ilya, So we use Za'arar in paste form on tri-tip, cooked on hardwood to medium rare and slice thick slather with red Shatta (basically Harissa). Stuff meat, fetta, romaine, red onion, tzatziki, Shatta/Harissa in a homemade samoon (dough is not far off the Khachapuri dough you made) for a great homemade gyro. Wish I knew you cooked while I worked under you, would have loved to have shared recipes. Love your channel. -Ryan S
