What my Grandma does for fresh noodles is that she fries it gently then dehydrates them in bundles just like packaged noodles. Helps preserve the texture after you boil them. I don't know exactly how she does it but maybe give it a try with your own spin? As always great food, good vibes.

I've seen quite a few clips of how to make Taiwan beef noodle soup by Chinese people and none using beef bone but you do! So you corporate the Vietnamese Pho broth method into this Taiwan dish. It's really more flavor and nutritious. Thumbs up.
