Making steak tartare may look simple (all you need is a good piece of meat, right?), but it takes a truly talented chef to perfect this classic French dish. Julien Ponthieu brought modern French cuisine to Berlin via his restaurant Les Valseuses, so he's the perfect candidate for showing MUNCHIES how it's done.

I'm from England and I can barely detect that he's speaking German with a French accent at all! But perhaps that's because our languages share so many similarities in accent and intonation and also a few of the words. I think that, as Europeans, we generally try to speak each-others languages in the local accent to try to 'fit in' and sound like wherever we are or whomever we're with. It's both a respect and a comfort thing at the same time! :D

For those saying he's gay because he said "partner". Partner (or Partenaire) in french doesn't really have that romantic relationship connotation. It's used more as in colleague kinda way.

I just got back from Berlin and was lucky enough to visit Les Valseuses and meet Julien himself and his Steak Tartare was by far the nicest I have ever had. Thank you so much for shining the spotlight on this guy Munchies, keep up the good work!

Horse meat really is fantastic. I love horses and drink horse milk and use horse milk toiletries, but I do eat horse sometimes.

Who translates this shit. He says 'Erde' in German (dirt) but the woman corrects his German and says "Pferde" (horses). There is no deer mentioned.

Awesome video; edits, cut and music were perfect. The "out take" in the beginning was great too. Been watching a lot on tartare, as I'm looking for a good place to start (sort of a hidden passion for cooking) and this was by far the best!

You got mixed up translating in the beginning (horse, deer, dirt). Pferd = horse Erde = dirt (soil) Hirsch = deer In the beginning he says you can also make it with dirt but he doesn't eat dirt. Then the woman says horse not deer. But nevermind, great job! ;)

I ate dinner with my friends today at a bistro, and they have special menu once in a while, we order it.. its a taste that ive never knew before, but in someway i kinda like it. Turns out to be beef tartar. Never thought i would like it, but now i know its really goood!

One of the reasons I don't eat the beef tartare here in France is that I'm not nuts about their presentation of it. This method looks better. We like it served French style with horse meat, however, the egg yolk right on the meat in an indentation, and you put chopped onion, a pickle, a few capers, et c. around on the side of the plate. Usually the condiments offered (and this is easy to make and do at home) are Tabasco sauce, Worcestershire sauce if it can be found, mustard, horse radish maybe, and I've seen oil offered. The bread is on the side. It's considered to have a raw meat meal at least seasonally here very healthy. Fun to garnish with a radish, et c. Oh, I've also seen lemon juice as a condiment. The diner can pick the mix they want to bite at, a little at a time, with nibbles of bread. I like raw meat meals once in awhile. This chef does a nice job, and adding a dash of cognac looks good. Uprated.

I just love how fucking sensitive everyone is these days. No bloody knowledge about food. Raw meat isn't dangerous as long as it comes from sustainable & trustworthy sources and is FRESH! Quality raw meat you wouldn't eat, but I'm sure you're fine eating McDonald's and frozen processed food, which is like poison to your body.

The quality of both the meat and the knife work make me want to make this at work. The music IS horrible but the recipe and his very clean but precise style of presenting is refreshing. To me, anyway. Well done, Munchies.

+chelseaworewhat If you ever go to Germany make sure to try something called "Mett". It is like Tartare but raw minced pork, spiced and smoked I think but completely raw, they serve it on rye bread with a few slices of onion and it is 10x as tastey as steak tartare

I’m not a great chef. But I have perfected and sold beef tartare. He made a couple mistakes and also some silly things. 2 drops of Tabasco won’t change the flavor of anything in that volume.

usually it is cut to small dice or even brunoise....also make sure you are using a high quality, lean, cut (tenderloin aka filet mignon is my go to cut).

An old comment, but a trick I learned is to pop it in the freezer for about 20 minutes before cutting it. It firms up the meat and makes slicing it easier, just make sure you don't put it in too long and freeze it.

Très étonnant que les Suisses ou les Belges n'aient pas là aussi, réclamés l'origine de la recette. Les frites, c'est Français (inventées sur le Pont Neuf à Paris en 1783). La fondue et la Raclette sont de la maison de Savoie, capitale Turin. Le steak tartare est aussi Français, inventé par Pois, et revisité par Bocuse. Plein le cul de rappeler ces vérités.

Being a butcher for50 years with my own meat market I sold lots off steak. Tare tare. I will eat it iff I see the piece off beef. Before it is minced. Has to to be very fresh and lean ground. Round has the best taste. My parents eat it once a week. All there life and lived to 90 never sick bestgrind it at home so you see the beef. Pepper salt. Nutmeg. That's all best taste. European s eat it. That doesn't mean every day once a week. Don't agree on eating raw pork. Just beef

Funny to see argentinean meat. All we have left here (arg) is transparement gross meat from monsanto while all the good meat gets exported. Never seen someone eat raw meat in my life too.

C'est pas déjà préparé... Il l'a coupé et mis dans un pot le temps de faire sa sauce?.. Pour ce qui est dans l'assiette, c'est juste une salade vinaigrette de base. C'est souvent servi avec de la salade vinaigrette balsamique ^^

In Ethiopia I'm pretty sure have their own type of tar tar. The meat is definitely freshly killed and raw chopped very small almost minced & heavily seasoned with their own spices. A lot of chilli, pepper, salt, herb spices. I need to actually look that up.

I once went to a fancy restaurant in Noumea with my partner's parents and I had the steak tartare which I'd had before in Belgium and loved. But the place was so expensive I didn't dare order bread to go with it. Do not try to eat this without bread, it is the devil's work.

you lost me at ketchup...i'm a bit of a tartare snob tho. also mayonnaise? wtf is this in and out burger? tartare is super basic so the quality of ingredients is *paramount*. high quality meat is essential. I hate to think that this is representative of German cuisine...cuz if it is i'll stick with the original French style tartare.

bunkerspreckels1 ya probably a better word Quentin Szuwarski I've never had ketchup in a tartare at a French restaurant. There is no official "French" recipe...there are many variations. I'm not saying no French person has ever put ketchup in tartare. If you google "French Beef Tartare" the first few recipes have many similar ingredients, no ketchup tho.

He is french, so his cooking is french, Not german. No matter where he decides to cook. Ans ketchup is tomato paste with sugar and vinegar. He can buy it or make it himself, no biggie.

Sure what would I know? I'm sure the Worcestershire and Tabasco are also traditional French products...I didn't say your watered down, shitty version of French tartar. I wrote ORIGINAL. I suppose tartare was invented after the mass production of Worcestshire and Tabasco though. I am aware that there are plenty of shitholes in France that serve low grade ground beef in this style.
