My wife is doing it with a little salt and French herbs before drying, then a bit of garlic to the jar with the oil :-) We prefer to dry them on very gentle settings over a day or two, it tastes better this way in our opinion :-)

Yes indeed, sun dried tomatoes are an excellent way to preserve all those excess tomatoes. You may want to try growing a type of tomato called ‘Sungold’. They are a small but super sweet yellow-orange tomato. Sweet like candy and very prolific. I added some of those to my red slices for added flavour … very good.

I just might have to get a dehydrator 🤔
